LSU AgCenter crawfish agent Todd Fontenot said that despite the historic freezing conditions and snowfall in many crawfish-producing parishes, producers and consumers can expect a quick rebound.

“We don’t foresee it being more than a temporary slowdown,” he said. “Since crawfish are cold blooded, their bodies slow down and they burrow as low as they can get in the mud and vegetation and stay there to protect themselves from the elements and predators because they are most vulnerable at that stage.”

When crawfish are facing these conditions, they’re not foraging and eating, so it does tend to set production back a bit as long as the weather remains frigid, Fontenot said.

During longer, sustained periods of freezing, production could be adversely affected. But the deeper the water in the pond, the more insulated the crawfish are when burrowing down, Fontenot said.

While Fontenot said there was some ice on his pond north of Eunice, it wasn’t significant, with the deeper water measuring above freezing at 36 degrees near the bottom.

With temperatures expected to rise into the 70s next week, Fontenot expects the mudbugs to start looking for food again and production to ramp up shortly thereafter.

“I think we’re going to rebound faster than previous years where it might have stayed in the 40s the week following a hard freeze,” he said. “With the positive upcoming forecast, I think it will take about a week, so folks should feel optimistic about getting their crawfish for the Super Bowl.”

Local Veteran Celebrates Cajun Culture with Bronze Finish in World Championship Gumbo Cookoff

McKinney, TX – Army veteran Matt Thibodeaux, owner and chef of McKinney-based businesses Thibodeaux’s Cajun Kitchen and Couteau Gourmand Catering, has proudly added another accomplishment to his culinary journey. Team Thibodeaux, comprised of Thibodeaux, fellow Army veteran Daniel Bryson and their families, claimed third place in the Professional Division for Chicken and Sausage Gumbo at this year’s World Championship Gumbo Cookoff in New Iberia, Louisiana. The event is held annually by the Greater Iberia Chamber of Commerce and draws competitors from all over the world.

For Thibodeaux, though, the trophy is just the icing on the roux. "This is about much more than winning," says Thibodeaux. "It’s about keeping our Cajun heritage alive and passing it on to the next generation." Every trip from McKinney to Louisiana offers his sons, Cooper and Teche, the chance to experience and take pride in their Cajun culture. "I’d drive the 900-mile round trip any day, trophy or not," he adds.

Thibodeaux’s Cajun Kitchen, a regular at the McKinney Farmers Market, has become a staple for locals craving authentic Cajun cuisine. Known for its mouth-watering gumbo, jambalaya, and signature Cajun seasoning, Thibodeaux’s booth is a can’t-miss destination for those looking to experience the flavors of Louisiana right here in Texas. The newly-won trophy will soon take its place at the booth, though for Thibodeaux, it’s just a symbol of his broader mission: sharing the Cajun culture and preserving the traditions that have shaped his life.
