Some of the most generous souls I ever met call me, " Teacher". I met them as I taught them weekly ESL classes at DFW Refugee Outreach Services .

From teaching them English to helping them find jobs, to mentoring them for The Hope Kitchen ; the resilence they show is unbelievable.

Today, they invited me for a lunch. Seeing their generosity and hospitality, I walked away reaffirmed that volunteering is the best form of self care.

Mantu (or Manto) are traditional Afghan steamed dumplings filled with spiced ground lamb or beef and onions, often served as a cherished, labor-intensive dish during special occasions like Ramadan. At The Hope Kitchen , the ladies look forward to Ramadan because of the larger orders for iftaar boxes.

This year we havent seen as many orders from local Masjids even though there is a growing number of mosques.

I understandthese decisions are made by committees but something to remember is that this is not just a catering business or restaurant. This is us as a community helping struggling Muslim Women earn a living with dignity who are vulnerable.

Masjids collect sadqa but this is a living opportunity to empower the same people that we collect funds for.

This is not just profit for them but this means they can afford groceries for the month.

It saddens me that masjids love collecting funds for sadqa but when an opportunity that really creates independence arises, the Muslim community isn't as determined. I have churches order year after year. So, it feels ironic that masjids lack the same vigor.

We appreciate the support and Hope given by our community to something that was just a wild, seemingly impossible idea 5 years ago

So many women are thriving and independent because of it. At the end of it, that is exactly the mission of DFW Refugee Outreach Services . Helping struggling refugee families live a life of dignity so they are not at the mercy of others.

Sawsan from Hope Kitchen has been struggling with finances and her son who has a kidney ailment has always been in and out of the hospital. Her husband does odd jobs. Currently, they have been facing a lot with their kids' health, car repairs, and unemployment. DFW Refugee Outreach Services paid the electricity bill of $494.52 in February and now their current bill is $521.85. They have $191.83 in their account as of now.

We are hoping to raise funds to help them recover from their financial crisis and get back on their feet.

The Price of War. The Weight of Displacement.

Today we sat with one of our *refugee brother*.
He showed us a video his sister sent him from back home.
Gunfire echoed in the background.
Her children were crying in fear.
Windows were shattered by shrapnel.
He sat there in silence — a man who escaped war — now forced to watch it unfold through a phone screen.

He feels helpless. Not only for his sister. But for hundreds of Afghans trapped in a worsening humanitarian crisis.
He earns $1,400 a month here in the U.S. When he received his tax return, $500, he didn’t upgrade his life. He didn’t save it.
He sent it back home — to families begging on the streets — just so they could afford bread to break their fast.

This is the character of the people we serve.

Our brother *Soobhi* who survived the brutality of the Syrian war, walked into our office trembling.
Severe dental pain.
His jaw clicking with every movement.
Fasting. Unable to eat.
Like hundreds of refugees, he has no dental coverage.
War did not break him — but untreated pain here is testing him.

We contacted the student dental clinic at Dallas College so he can at least be evaluated. We gave him Ensure so he could drink something because chewing is unbearable.

A baby on the way.
Father lost his job.
Rent and utilities still due.

*A pregnant mother* contacted from Austin. Due any day now.
She, her husband and 3-year-old child have been detained for five months.
She was released to a shelter because of her approaching due date.
She doesn’t know where to turn.
She doesn’t know who will be there when she gives birth.
She doesn’t know when she will see her family again.

Our sister *Taghred*, hurt during the Syrian war is still struggling with immense pain, but she is still trying to run her catering business and raise her kids.

Every single one of these families wanted the same simple thing:

To live in peace.
To raise their children in safety.
They already paid the price of war.
Now they are paying the price of displacement.
And policy.
And poverty.
And uncertainty.

For those who may not know the story behind Hope Kitchen—this is more than a catering service.

Hope Kitchen, an initiative of DFW Refugee Outreach Services is made up of struggling refugee women whom I have had the honor of mentoring and supporting as they build a livelihood with dignity. These women face language barriers and financial hardship, yet they show up with determination, pride, and integrity to earn an honest living.

It is deeply disheartening to see people order from Hope Kitchen, haggle over already reasonable prices, and then arrive to pick up food saying they don’t have cash and will “Zelle later.”

These women are trusting. When someone promises sincerely, they believe them.

Recently, a gentleman ordered food for his Nikkah and still owes the remaining balance. Week after week, he promises payment “shortly.” Meanwhile, the women who worked tirelessly to prepare that food are left waiting.

Despite being trained to clearly state that payment is due at pickup, they hesitate to be firm—because they trust people to honor their word.

But let’s be honest:
When you order from any restaurant, you know you do not receive your food without paying.
Why, then, is it acceptable to treat struggling women differently?

$200 is not a small amount for families who are already doing their best to survive. It is beneath their dignity to have to chase payment or repeatedly remind someone who benefited from their labor.

I have now made this non-negotiable:
➡️ No food is released without full payment—no matter the excuse. Please bring cash or Zelle payment before expecting to be handed your food.

This is not about rigidity.
It is about respect, fairness, and dignity.

Please extend the same courtesy and decency you would give any restaurant.
And please, do not take advantage of their goodness.

Their work deserves to be honored.

Update: A generous soul reached out and paid the balance due. Thank you for your kindness.

Saima was taking ESL classes provided by DFW Refugee Outreach Services.

She cooks amazing food. Today, when I stopped by on short notice to drop off some items, she quickly made the most delicious Bolanis. This was not the usual with just potatoes filing. These were the very special, traditional ones made with a unique filling.

Bolani Gandana is a popular Afghan dish consisting of thin, pan-fried, or baked flatbreads stuffed with a savory filling primarily made from gandana (Afghan leek or garlic chives) and fresh herbs.

See her in action making them with great finese and great love. Served with a delicious yogurt and coriander dip.....It was so so delicious.
