Mushrooms. The umami powerhouse.

So versatile that they can be used in literally any cuisine:
Italian- mushroom pasta, pizza, risotto
French - 🥩 and mushroom glaze, cream of mushrooms
Mexican- Oyster mushroom tacos, lions mane pozole
Asian- from Shiitake miso soup to stir fry.
I can keep going, the truth is, mushroom are your blank canvas. The textures and flavors are as diverse as you can imagine.

Mild umamami, peppery, meaty.

Oyster mushroom is like that friend we all have that will get along with anyone, blends well. It can be elegant but will be tough if needed...

We recommend our newest clients to start with Oyster s when diving into the world of gourmet mushrooms.
Why?
It has an noticable yet not overpowering umamami flavor.
Very easy to cook, just sauteed and you'll nail it. Remember the number one technique:

LET THEM SEAR-- Let them get golden brown✨ 🟤
This means, don't move them too much.

A full 5-course meal with mushrooms 🍄‍🟫🤎🧡

This was a hearty cream of mushroom...the type of soup that warms your heart and makes you feel at home.

Chef Erick .hornfandb was kind enough to share the recipe with us, here it is! Enjoy and let us know if you make it

The wine used was from

CREAMY CHESTNUT MUSHROOM SOUP

Recipe makes 4 servings

Ingredients

1 lb chopped fresh Full Circle chestnut mushrooms

½ chopped medium white onion

1 cup Gewürztraminer wine from Zin Valle

3 oz roasted garlic

½ cup roasted garlic oil

1 fresh thyme sprig

4 cups chicken stock, veggie stock, or water

4 cups heavy cream

Kosher salt to taste

White pepper to taste

Instructions

1. In a thick-walled stock pot, at high heat sweat the onion with roasted garlic and garlic oil.

2. Add the chopped chestnut mushrooms and allow them to begin to wilt. Deglaze with the Gewürztraminer.

3. Once the wine has cooked out, add the stock. Then, using a blender, purée the mixture until smooth.

4. Return the mixture to the stock pot and add the cream. Bring to a simmer and check the seasoning.

5. Serve in a bowl and garnish with a toast point or garnish of your choice.

🍄 SOPA CREMOSA DE HONGOS Chestnut

Rinde 4 porciones

Ingredientes

450 g de hongos castaña frescos de Full Circle, picados

½ cebolla blanca mediana, picada

1 taza de vino Gewürztraminer de Zin Valle Vineyards

85 g de ajo rostizado

½ taza de aceite de ajo rostizado

1 ramita de tomillo fresco

4 tazas de caldo de pollo, vegetal o agua

4 tazas de crema para batir (nata para montar)

Sal kosher al gusto

Pimienta blanca al gusto

Instrucciones

1. En una olla de fondo grueso, a fuego alto, sofríe la cebolla con el ajo rostizado y el aceite de ajo.

2. Agrega los hongos castaña picados y deja que comiencen a ablandarse. Desglasa con el vino Gewürztraminer.

3. Una vez que el vino se haya reducido, añade el caldo. Luego licúa la mezcla hasta obtener una textura cremosa.

4. Regresa la mezcla a la olla y agrega la crema. Deja que hierva suavemente y ajusta la sazón.

5. Sirve en un tazón y decora con una rebanada de pan tostado o la guarnición de tu elección.
