The best vegan turkey roast with crispy skin! Easy to make, made ahead of time. It's super meaty, tender, juicy, rich yet mild flavor, and with buttery garlic crispy skin!

Great Northern Bean soup with spinach, and carrots. This did not disappoint. I found a new trick to make bean soup creamy without the extra calories of cashew cream…just when the beans are al dente, grab your immersion blender and with your blade touching the bottom of your pot and run on high for 20 seconds.
So incredibly creamy, healthy, and of course, it’s vegan! ✌🏻❤️🌱
