Great Northern Bean soup with spinach, and carrots. This did not disappoint. I found a new trick to make bean soup creamy without the extra calories of cashew cream…just when the beans are al dente, grab your immersion blender and with your blade touching the bottom of your pot and run on high for 20 seconds.
So incredibly creamy, healthy, and of course, it’s vegan! ✌🏻❤️🌱

Food for thought 🤔

I am not a big fan of “fake meat” but do eat the occasional Beyond or impossible Burger. Still, I just can’t fathom eating all of this garbage 🤷🏼‍♀️
