Accidentally stumbled upon my husbands new favorite jam 😂 He loves this strawberry lemonade jam so much that I’ve already made a second batch!

If you want to use pectin, add the pectin in at the beginning and only boil for 1-2 mins after adding the sugar.

I’ve done a lot of concentrates, but this is the first time doing strawberry limeade and it’s sooo good! 😮‍💨 Got the recipe from my friend Lauren Semple | The Semple Homestead

And I scored strawberries on sale for $1.77/lb, so of course I bought 10 packs! I just finished up some strawberry lemonade jam and a strawberry jalapeño jam - both without pectin.

Canning 101: How do you know if your jars are sealed?

After processing, set your jars on a towel and leave undisturbed 12-24 hours. After that time, you’re safe to remove your rings and check your seals! Do not store your jars with the rings on as they’re not necessary and can create a false seal.

What other canning questions should I review? We’re headed into peak canning season!

Preserving some herbs from the garden and I can’t get over how good this lemon balm smells!! It’s supposed to be great for a night time tea, too.

I have the medium freeze dryer! I’ve used it for fruit, broth, dog treats, etc.!

In case you forgot, it’s time to do your vanilla for Christmas gifts! I’ve never been so ahead of the game 😂

But also, our personal bottle was empty so I just threw more vodka in that at the same time. I’ll reuse my beans twice.

If you don’t, why not? Botulinum spores can’t survive in an acidic environment, so certainly not a concern in jam.

Refrigerator Pickles 🥒

4 cups white vinegar
2 cups water
2 TB salt
1-2 TB sugar
Dill
Garlic
Whole peppercorn
Mustard seed
Red pepper flakes
2 bay leaves

If you wanted to make these shelf stable, my preferred method is always open kettle canning. Not USDA approved but that’s how my grandmas done it 60+ years and no botulism is growing in that environment anyway.
