Bake big russet potatoes until fluffy, slice them open and load them up with crispy bacon, shredded cheese, sour cream and green onions.

Cut bell peppers in half and remove the seeds. Brown ground beef with onion, garlic and taco seasoning, then stir in cooked rice.

🍗 2. Sheet-Pan Mexican Chicken & Potatoes RECIPE

Cut potatoes and bell peppers into chunks and arrange them around chicken leg quarters on a sheet pan. Drizzle everything with a little oil and season with garlic, cumin, chili powder, paprika, salt and pepper.

Roast at 425°F for about 45–55 minutes, or until the chicken reaches 165°F and the potatoes are tender. Add sliced jalapeños before roasting if your family likes a little heat. 🔥
