NEW UPADTED MENU AND OFFERINGS.

Just wanted to keep it short and sweet. I can take requests for certain shapes and sauces but these are the tried and true. Looking to do some seasonal specialties like sweet corn agnolotti, Basil pesto, etc.

THE ONLY CARBONARA RECIPE YOU’LL EVER NEED.

INGREDIENTS:
1 pound fresh tonnarelli
1/4 pound guanciale
6 egg yolks
1 cup Pecorino Romano cheese
Cracked black pepper (to taste)

METHOD:
Bring a large pot of water to a rolling boil.

Cut guanciale into 1/8 inch slices, the cut guanciale into 1/4 inch slivers.

Place guanciale into a cold pan and turn heat on medium low. You want to slowly render the fat out of the guanciale.

In a mixing bowl, mix egg yolks, pecorino and black pepper, and set aside.

Once guanciale is about 90% cooked, drop the pasta into the boiling water and cook for 1 1/2 to 2 minutes.

Transfer the cooked pasta to the pan with the guanciale, making sure not to discard the pasta cooking water, and turn heat up to medium high.

Ladle in a little bit of pasta cooking and toss to coat the pasta. About 1-2 minutes.

Remove pan from heat, and add a half ladle of pasta water to the egg mixture, then pour the eggs over the pasta.

Mix and toss the mixture, adding pasta water if needed.

(DO NOT PLACE BACK ONTO THE HEAT. THIS WILL CAUSE THE EGGS TO SCRAMBLE. YOU JUST WANT TO TEMPER THE EGGS INTO YOUR PASTA.)

Serve immediately with more Pecorino and fresh cracked black pepper.

Properly kneading you’re dough is essential for fresh pasta. All those little air bubbles get dispersed while rolling the dough and give the pasta it’s structure and texture which allows your pasta to absorb sauce rather than repel it.
