While I am happy with my design I look forward to building that part of my team 😌
Filming is not top of mind for me and I have been practicing leaving my phone at home when possible.
I also received photos of Lebanon from my mom of our village, Bint Jbeil.
The cakes make my home smell like a bakery and I love for art and bean them during the the Gaza genocide to try to wrap my head around the number of people murdered by our tax dollars.

And tomorrow we will be in the kitchen and alchemising ingredients into delicious food.

I didn’t grow up making Musakhan but it will now be a regular on my dinner rotation. Caramelized onions, sumac, roasted chicken on taboon— Palestinian comfort food at its finest, and a dish I’m proud to have on my table.
Made with halal, organic & all natural.

INGREDIENTS
3 lbs bone in chicken
1/3 cup olive oil
3 large onions, thinly sliced
3 tbsp sumac + more for garnish
1 tsp allspice
1/2 tsp cinnamon
1.5 tsp salt + 1/2 tsp black pepper
Taboon or pita bread
1/4 cup pine nuts + fresh parsley to finish

INSTRUCTIONS
① Preheat oven to 400°F. Season chicken with 2 tbsp olive oil, 1 tbsp sumac, allspice, cinnamon, salt & pepper. Roast 35–45 min.
② Slowly cook onions in remaining olive oil 15–20 min until caramelized. Add 2 tbsp sumac and a pinch of salt. Cook 2–3 more min.
③ Spread onions over flatbread on a tray, add roasted chicken on top. Back in the oven 5–10 min.
④ Toast pine nuts. Garnish with pine nuts, parsley & a sprinkle of sumac. Serve warm.

When people ask my favorite place for Arabi food the answer is always at home. Especially in summer with mint, tomatoes, cucumbers and radishes from the garden. What a miracle that we can grow such beautiful, delicious things!

This ramadan has been so heavy. I’ve cried more nights than not. My screen time is 📈. And whenever I feel this way the only thing that makes sense is to cook and feed others.

I am horrified by this world. And deeply amazed and in awe at the beauty, fragrance, taste and texture of pomegranate. My family surname is Irani. From Iran.The land of pomegranates and saffron and pistachios and faith and honor and integrity.

If you can support efforts for those who are suffering bc we can not be bothered enough to just pause feeding the machine. Myself included. The consciences are the only way to manage the 47,000 to manage to maintain life in this society.

But we have to do something. Collectively. Now. The quickest and easiest is to reduce spending. There are actions to not purchase anything on Fridays. That means using cash and supporting your small family owned businesses. And trading. And reducing. And not going to Disney (it’s honestly so lame and outdated now and I just went but 2026 is requiring something more of me. Of all of us.

We can see everything so clearly. And to ignore us willful ignorance. And that comes at the cost of people being bombed. As you read this. And if you made it this far thanks. My heart is broken and when I feel this way I only want to cook and feed you.

Holding this moment close. While the world is on fire and we watch the destruction of humanity, over 100 neighbors gathered with open hearts and minds to learn, to connect and to love their neighbors. 🩷

I am incredibly grateful to Mayor and team (Erica, Fatima, Alia + team)for their partnership in creating space for neighbors to gather and get to know one another.

While it is Dinner with Your Muslim Neighbor, because I as the host am Muslim, there were neighbors from many faiths (which were self disclosed and identified in the registration) were in attendance. Neighbors from Catholic, Presbyterian, Baptist, Jewish, Pagan and Coptic came together to join their muslim neighbors for a catered dinner. In a world set on dividing us, a dinner together is an act of resistance.

I look forward to many more dinners with my neighbors. 🩷

Dinner with Your Muslim Neighbor, an event founded by Chef Amanda Saab will take place on Thursday, January 15, 2026 at the Lincoln Ballroom of the Ford Community & Performing Arts Center at 6 pm.

Muslim and non-Muslim neighbors will be seated together with conversation prompts to promote deeper curiosities and conversation, and a dinner catered by local restaurants.
