What's for dinner? Fried rabbit hind quarter with potatoes and broccoli.

Farm raised rabbit isn't your grandfather's hunting catch when the deer aren't moving. Farmed rabbit is tender with good flavor and can be cooked similar to chicken. Don't get it wrong, slow cooked braised rabbit is delicious but it isn't the only way to prepare it.

We bake, pan sear, grill, suis vide and pressure cook our meals. We even cook over an open campfire when we get the chance!

There's a lot of farms struggling in this heat wave, many losing animals no matter what they do to try and keep them cool.

A couple weeks ago, we lost seven, 2 week old rabbits due to a single 95°F day and 80% humidity. The first loss we've had due to heat since we started raising rabbits a few years ago.

With a heat index of over 100°F for 2 days, we decided to take the entire herd into the basement to keep them as cool as possible. Thankfully, we did not experience the loss that many others experienced the past couple of days. One of the hard things about raising animals in new england, the drastic change in temperature is unpredictable and hard for animals to acclimate to. Mother nature can be ruthless.
