🛒 Ingredients
The Pasta & Shrimp:
• 1 lb. linguine or fettuccine pasta
• 1 lb. large shrimp (peeled, deveined, and tails removed)
• 2 cups fresh cherry tomatoes (some left whole, some halved)
• 1/2 tsp salt and black pepper (to taste)
The Garlic Butter & Herb Sauce:
• 4 tbsp unsalted butter
• 2 tbsp extra virgin olive oil
• 5 cloves garlic (finely minced)
• 1/4 cup seafood stock (or dry white cooking w**e)
• 1/2 tsp red pepper flakes (optional, for a subtle touch of warmth)
• 1 tsp dried parsley or oregano (or fresh, finely chopped)
• Juice of 1/2 fresh lemon
👩🍳 Instructions
1. Boil the Pasta: Bring a large pot of heavily salted water to a rolling boil. Cook the linguine according to the package directions until it is perfectly al dente. Drain the noodles, making sure to reserve about 1/2 cup of the starchy pasta water for later, and set aside.
2. Sauté the Garlic and Tomatoes: Heat the olive oil and melt 2 tablespoons of the butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1 minute until highly fragrant. Toss in the cherry tomatoes and cook for 3–4 minutes until they begin to soften, slightly blister, and release their sweet juices.
3. Sear the Shrimp: Toss the shrimp directly into the skillet with the tomatoes. Season with salt, black pepper, and your dried herbs. Cook for about 2 minutes per side, tossing occasionally, until the shrimp turn a beautiful pink and opaque color.
4. Create the Silky Sauce: Pour in the seafood stock (or white w**e) and lemon juice, letting it bubble up and reduce slightly for 1 minute. Add the remaining 2 tablespoons of butter into the pan, stirring continuously to create a rich, glossy glaze.
5. Toss to Combine: Add the drained linguine directly into the skillet, as shown in the image "08a777a8f92d8763bcf5face48956f48.webp.jpg". Use tongs or chopsticks to toss the noodles thoroughly, allowing them to soak up the garlic butter sauce. If the pasta looks a little dry, splash in a few tablespoons of your reserved pasta water to make it extra silky.
6. Serve Hot: Twirl the glossy pasta onto plates, making sure to scoop plenty of the juicy shrimp and bursting tomatoes right on top. Serve immediately while steaming hot!
Pan-searing cherry tomatoes right into a butter sauce adds such a nice, sweet pop of flavor to a seafood pasta. Do you usually like adding veggies like tomatoes or spinach to your shrimp noodles, or do you prefer keeping it strictly about the seafood and garlic? 🍤🍅
