1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
3. In a large bowl, cream together the butter and 1 1/2 cups sugar until smooth. Beat in the egg and vanilla (and almond extract if using). Gradually blend in the dry ingredients.
4. Roll rounded teaspoonfuls of dough into balls, and place onto the prepared baking sheet. Slightly flatten the top of each ball with the bottom of a glass.
5. Sprinkle the tops with the remaining granulated sugar.
6. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet for two minutes before removing to cool on wire racks.
