Thai Peanut Pork Patties with Creamy Peanut-Lime Sauce

Serves: 4–6

For the Patties

Ingredients

• 1 lb Enoch Farms Ground Pork
• 2 green onions, finely sliced
• 2 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 1 tablespoon soy sauce
• 1 tablespoon fish sauce
• 1 teaspoon toasted sesame oil
• 1 teaspoon sriracha (optional)
• 1 teaspoon brown sugar or honey
• Zest of 1 lime
• ¼ cup panko breadcrumbs
• 1 egg
• ¼ cup chopped fresh cilantro
• Neutral oil for cooking

Creamy Peanut-Lime Sauce

• ½ cup creamy peanut butter
• 2 tablespoons soy sauce
• 1 tablespoon rice vinegar
• Juice of 1 lime
• 1 tablespoon honey
• 1 teaspoon grated ginger
• 1 clove garlic, grated
• 1 teaspoon sriracha (optional)
• 2–4 tablespoons warm water to thin

Whisk until smooth and pourable.

Quick Pickled Vegetables (Optional but Recommended)

• 1 cup shredded carrots
• 1 cup thinly sliced cucumber
• ¼ cup rice vinegar
• 1 tablespoon sugar
• ½ teaspoon salt
• My mom adds jalapeños!

Let sit while the patties cook.

Directions

1. Combine all patty ingredients in a bowl. Mix gently until just combined. Overmixing can make the patties dense.
2. Form into 6–8 patties about ¾ inch thick.
3. Heat a large skillet over medium heat with a drizzle of oil.
4. Cook patties 4–5 minutes per side until deeply golden brown and the internal temperature reaches 160°F.
5. Let rest for a few minutes before serving.

Serve With

• Jasmine rice
• Coconut rice
• Rice noodles
• Lettuce wraps
• Asian slaw
• Steamed broccoli or snap peas

Top with:

• Creamy peanut-lime sauce
• Pickled vegetables
• Chopped peanuts
• Cilantro
• Sliced green onions
• Lime wedges

Farmers Market Version

Turn this into a sandwich by serving the pork patty on a toasted brioche bun with:

• Crisp cabbage slaw
• Peanut-lime sauce
• Quick pickled carrots
• Fresh cucumber slices
• Cilantro
• A squeeze of lime

It’s the kind of sandwich that feels familiar but has bold Thai-inspired flavors.

Even Better: Thai Peanut Pork Meatballs

This mixture is also fantastic rolled into 1½-inch meatballs.

Bake at 400°F for 18–20 minutes, then brush with extra peanut-lime sauce and garnish with cilantro, chopped peanuts, and green onions. Serve over jasmine rice or with skewers as an appetizer.

An update on the cyclospora front!

For weeks the signal pointed at lettuce and salad greens without a source attached-- now investigators reportedly have one. Shredded iceberg lettuce supplied by Taylor Farms, served at some Taco Bell locations, has been identified as a likely source. The FDA is expected to advise people shortly to avoid shredded lettuce at Taco Bell in Michigan, Ohio, West Virginia, Kentucky, and Indiana.

This is still coming from people close to the investigation, and Taco Bell says officials haven't formally confirmed a link to the chain or any supplier.

Nationally, close to 7,000 people may have been sickened since May 1. About 1,645 of those are confirmed, the rest are still under investigation, and no deaths have been reported. Michigan has been hit hardest by a wide margin and cases could keep rising through the end of August.

What does this mean for you?
If you ate at Taco Bell recently and you've had watery diarrhea, cramping, or bloating that won't let up, check in with your doctor. Cyclospora is treatable with a specific antibiotic once diagnosed. It can stretch on for weeks and come back if you leave it alone.

NOTE: This isn't only a Taco Bell story! Taylor Farms supplies plenty of grocery stores and restaurants, so the broader caution around lettuce and salad greens still holds.

Heat is still the most reliable way to kill this parasite, but that's unlikely to apply to iceberg lettuce, since it's not something you're going to cook. Washing, vinegar soaks, and salad spinners won't dependably get it off produce either. So for the food actually in question here, there's no prep trick that saves it. The safe play is skipping it until this settles out. Heat still earns its place for the other produce cyclospora travels on, like berries or herbs, if you'd rather cook those down than toss them.

If you're pregnant or immunocompromised, it's worth being extra careful right now.

Cyclospora doesn't spread person to person, and symptoms can show up a week or two after exposure. So the cases we're seeing now trace back to exposures from a while ago, and the picture should keep sharpening as investigators pin down the source.
