Slow Cooker Garlic Butter Pork Chops
These tender, juicy bone-in pork chops are slow-cooked in a rich garlic butter sauce with herbs, creating an incredibly flavorful meal that's perfect with mashed potatoes, rice, or roasted vegetables.
Ingredients
4 bone-in pork chops (about 2 lbs / 900g)
2 tbsp olive oil
4 tbsp unsalted butter
6 cloves garlic, minced
1 cup chicken broth
2 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 tbsp honey
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1 tsp Italian seasoning
½ tsp dried thyme
½ tsp black pepper
1 tsp salt (or to taste)
1 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
1 tbsp chopped fresh parsley (for garnish)
Instructions
Pat the pork chops dry with paper towels. Season both sides with salt, pepper, smoked paprika, onion powder, garlic powder, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until golden brown.
Place the pork chops in the slow cooker.
In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
Stir in the chicken broth, Worcestershire sauce, Dijon mustard, honey, thyme, and a pinch of black pepper. Mix well.
Pour the garlic butter sauce over the pork chops.
Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the pork is tender and reaches an internal temperature of 145°F (63°C).
If you prefer a thicker sauce, stir in the cornstarch slurry during the last 20 minutes of cooking.
Spoon the garlic butter sauce over the pork chops, garnish with fresh parsley, and serve hot.
