When Blake went to Chicago a few weeks ago, he and his wife visited several great bars around the city including classics at Gus’s Sip & Dip, Chinese-inspired drinks at Nine Bar, beers at the Guinness Open Gate Brewery, martinis at Bisous, and more Guinness at the Chief O’Neill’s Pub Sunday brunch.

Several weeks ago, Blake had a chance to get cocktails at the world renowned Aviary in Chicago known for their inventive cocktails and elaborate presentations.

In Dublin, they have more than just pubs and have some world-class cocktail bars with some of the most beautiful physical menus I have ever seen. Some of them even served delicious welcome mini-cocktails to give you time to peruse their menus. We went to the Sidecar at the Westbury for our weekly martini ritual and enjoyed a drink off their martini trolley. Bar 1661 has made its name as the world’s preeminent Poitin bar, emphasizing Ireland’s oldest spirit. We enjoyed several different cocktails incorporating Poitin, including their iconic Belfast Coffee. Also their standard Irish Coffee was out of this world with layers of flavor from Irish butter washed Irish whiskey to their syrup being made with water soaked in Irish soda bread to their coffee being made with half Guinness. Finally, Vintage Cocktail Club presented their cocktails in a historical, chronological fashion with elevated takes on everything from juleps to tiki drinks. Dublin has a thriving craft cocktail scene!

While in Ireland, Blake visited the Irish Whiskey Museum to learn more about its history through a storytelling-based format with a blending class to learn about the different styles of Irish whiskey such as single pot still, single malt, single grain, and even peated whiskey.

Blake and his wife Renae attended Gin School at Pearse Lyons Distillery while in Ireland to distill their own custom batch of gin. Later Blake went back to tour the distillery and taste their Irish whiskies. Several years ago, we had visited their sister brands in the United States including Town Branch Bourbon and Lexington Brewing Co.

No trip to Ireland is complete without a visit to a pub (or twelve). From Ireland’s oldest pub with Sean’s Bar in the countryside to a pub by a graveyard to restaurants in old churches to the corner pub, a quality pint or drop of whiskey is never far away.

Visited Roe & Co across the way from the Guinness Brewery (the distillery is located inside an old Guinness power station). Diageo resurrected this brand which once was the largest distillery in Ireland just down the street from its original location. We took a tour of their production facility, tasted their core offerings, and then created a whiskey blend for our own custom cocktail before enjoying our creation at the Power House cocktail bar.

Visited Teeling Distillery…the first company to make whiskey in the city of Dublin in decades after the consolidation of Irish Distillers Limited. They are pushing the envelope with their innovative approach to Irish whiskey such as blending whiskies finished in the typical ex-bourbon barrels and rum casks instead of the traditional sherry casks. They also have a series of pot still whiskies finished in different woods from around the world, so I checked out the new virgin Carpathian Oak edition at the bar after the tour.

On the second stop on my whiskey tour into the Irish countryside, I went to the Tullamore DEW distillery. Although the brand has a long history, William Grant & Sons acquired the brand and built this state-of-the-art distillery about a decade ago. The experience started with a signature Irish coffee because Tullamore is the whiskey of choice for San Francisco’s Buena Vista Cafe that popularized the cocktail. Then we explored the production floor that reminded me of the ultra modern Heaven Hill Springs Distillery we had visited the month before. Tullamore has two different trios of copper pot stills, one set designed specifically for malt whiskey and another set for pot still whiskey. They have a separate building with their column still to make grain whiskey, so Tullamore produces all three types of Irish whiskey to produce their blend. We went to one of their warehouses (could not take photos) and sat in a snug tucked away behind some barrels to enjoy a freshly thieved pour of cask strength pot still whiskey. The tour finished with a tasting of some of Tullamore’s core lineup.
