In Dublin, they have more than just pubs and have some world-class cocktail bars with some of the most beautiful physical menus I have ever seen. Some of them even served delicious welcome mini-cocktails to give you time to peruse their menus. We went to the Sidecar at the Westbury for our weekly martini ritual and enjoyed a drink off their martini trolley. Bar 1661 has made its name as the world’s preeminent Poitin bar, emphasizing Ireland’s oldest spirit. We enjoyed several different cocktails incorporating Poitin, including their iconic Belfast Coffee. Also their standard Irish Coffee was out of this world with layers of flavor from Irish butter washed Irish whiskey to their syrup being made with water soaked in Irish soda bread to their coffee being made with half Guinness. Finally, Vintage Cocktail Club presented their cocktails in a historical, chronological fashion with elevated takes on everything from juleps to tiki drinks. Dublin has a thriving craft cocktail scene!
