Off it goes….to the Farmer’s Fair baking contest! It is one of the few things I bake… Carrot cake. I’ve entered at least 10 times resulting in a bunch of blue ribbons, one year a fourth place which I wasn’t real happy about 😂….. and last year a second place. ORANGE CAULIFLOWER?
I’ve never had it before, so figured I’d give it an Italian Girl whirl. I cut it into slabs, brushed it with some olive oil, sprinkled some fresh thyme, salt, and pepper. I baked it at 400 (preheated the non stick baking sheet) for about 6 minutes on each side.
I’ll confess…I may eat the whole batch!

Meal prep Sunday takes a healthy turn with….
VEGAN CHILI! My friend Shirley brought a version of this to a camping trip a few years back, and none of us knew it was vegan. I have modified it by making my own vegetable broth, adding some fresh spices, mushrooms, etc. The soy chorizo can be found at Trader Joe’s and I will post the recipe in the comments. I’m just letting this deliciousness simmer while watching football. But it is a great rainy Sunday football meal.

Some dishes are just perfect for sharing, and a classic quiche is definitely one of them!
Whether it’s breakfast, brunch, lunch, or even dinner with a simple salad on the side, quiche is one of those versatile dishes that always comes in handy. It can be enjoyed warm or cold, and it’s easy to reheat whenever you’re ready to eat.
It’s also a thoughtful thing to bring to someone who could use a little help. Sometimes, having something homemade in the fridge that you can grab whenever you need it is worth its weight in gold. ❤️

This was the best batch of Manhattan clam chowder I’ve ever made! The big difference… Definitely homemade fish stock. It was a bit of work but worth the time and effort. I will post the recipe tomorrow.
