Sadly there hasn't been much smoke coming out from Douds mafia BBQ. But that doesn't mean we haven't been cooking. We have done some quicker meals that haven't required alot of time, from baked potatoes topped with leftover pulled pork (drenched in some Bramble Barbeque sauce) to some birria tacos in the insta pot. We got a package in the mail this week that contained what we have been waiting for Meat Church BBQ new rub, Garlic Jalapeño Blanco rub. Once we got our hands on it we knew we had to make one of our favorite meat, chicken wings. Let's just say they were delicious and we have added this rub to our arsenal of rubs.

The same breaded chicken breast made into 2 different meals, sign us up.

Last night we took 3 chicken breast and cut them and half. Once that was done they were dipped into flour, egg wash, and breadcrumbs mixed with Slap Ya Mama to give it some extra pop. Once breaded into the skillet with some vegetable oil and butter.

Now comes the fun part, night 1 we used Blues Hog Buffalo Garlic Parm sauce and some French fries. Night 2 we made some chicken parmesan with some homemade pasta sauce. Now i did add some Damn Yankee Texas BBQ Pinstripe Paisano Italian Blend to the sauce and that made it even more delicious.

We were up in Des Moines today and knew we had to take a trip to Cerro Grande Meat Market. Pick up some sausages and these killer Iowa pork chops. Sadly we did not get home in time to fire up the drum and grill the pork chops, but we did the 2nd best thing, seared in cast iron skillet . After the Pork chops were season with some Heath Riles BBQ Garlic Jalapeño and Meat Church BBQ Holy Gospel they were placed in the hot skillet with some butter. Paired the pork chops with a baked potato, and talk about a delicious meat and potatoe meal.

Thanks G.A.T.E for putting on the BBq competition in Eldon. The weather ended up being nice for the final few hours of the cook. We ended up with 4th place chicken out of 13 teams and 9th place ribs out of 22 teams. Pretty good for not cooking in a competition since April. We made some bacon wrapped deer bites stuffed with cream cheese, jalapeño, and pepper jack cheese for the appetizer class.

We are all set up down in Eldon today for the BBQ Competition. Gonna be a wet day but should be a fun one.

We did a practice run on ribs before we compete in Eldon next weekend, and needless to say they were amazing. A few things to tweak but I think we will be bringing our "A game" next weekend.

A competition right down the road, man you can't beat that. We are looking forward to competing at The Annual Cook-off.
