Easy Fast Beef Stew

Serves 4-6 (or 2 hungry bikers)

2-3 lbs stew meat
1 pkg baby carrots, chopped
10 stalks of celery, chopped
1 pkg baby gold potatoes, cut it to quarters
2 pkg kinder pot roast mix
2 pkg brown gravy mix
One loaf of crusty bread

This is a fast easy way to make beef stew. They still come out with an incredible tasting meal.
In a large stock pot add all your vegetables and cover with water put on a high heat and bring to a boil. Cook until fork tender.
Meanwhile, in a pan with some oil in it, take your beef stew meat, and spread it out. Sprinkle your kinder seasoning over the top. Stir off until meat is thoroughly browned and begins to tender.
Once vegetables are done for your meat mixture and any juices into the pot. Bring back to a boil and add both packages of brown gravy mix. Stir well to prevent lumps. Allowed to cook 20 minutes and you’re done. Serve with bread.

Cheesy Chicken and Rice

Serves 4 (or 2 hungry bikers)

4 chicken breasts
2 cups dry rice
1 can cream of chicken soup
Lost to your favorite season salt
5 cups, water or chicken stock
Salt and pepper to taste
1/2 box of fried onions
8 oz shredded cheddar cheese

Preheat your oven to 350°. Grease a casserole dish or as I used an aluminum pan. Set aside.
In a small bowl mix half your chicken stock or water with your cream of chicken soup and until it becomes completely incorporated. Poured it into your casserole dish then add in your dry rice stir around so everything is nicely covered. Add some of your seasonings and stir well.
Seasoned both sides of your chicken with your favorite seasoning then place into casserole dish on top of rice. Sprinkle the fried onions on top of everything.
Place casserole dish onto an aluminum pan to prevent spillage while cooking. It’s not necessary but I like a clean oven. Bake for 1 hour then remove and sprinkle cheese evenly over all four pieces of chicken. Been returned to oven for another 15 minutes to allow the cheese to melt. Removed from oven and allow a cool 10 minutes then serve. Enjoy!

Pork Peppers and Onions

Serves 3-4 (or one hungry biker)

1-2 lbs bones less pork ribs, cubed
1-2 lg onions, sliced thin
2 bell peppers, different colors, sliced thin
1 pkg carne asada seasoning
Oil
Salt and pepper to taste
1 lb Shredded cheese
1 pkg yellow rice

Coat a large pan with oil over med-high heat. Season pork cubes with salt and pepper and add to pan. Allow to cook for a couple minutes the stir pork around to be sure raw pork is turned to raw side down
Meanwhile slice your onions and peppers. After pork has browned add veggies to the pan and sprinkle seasoning over everything. Stir well to coat everything and allow to cook a few minutes. Stir often.
Prepare your yellow rice and set aside
Once pork is cooked throu and veggies have wilted serve over rice and top with cheese.

More comfort food needed and split pea hit the spot

Split Pea With Ham

Serves 6-8 (or 3 hungry bikers)

1 bag dried split peas
8 cups chicken stock
Water as needed
1 tbsp season salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 cup butter
1-2 carrots, diced
1-2 celery stalks, diced
1 med onion, diced
2 lbs ham steaks, diced
Parsley for garnish

In a large bowl place washed peas. Cover with water and allow to soak overnight
Transfer peas to a crockpot and turn to high. Add chicken stock and allow to heat to boiling then reduce to med or low and set aside
In a sauté pan melt butter and add in all veggies. Cook till tender then add to crock along with seasonings. Stir well. Allow to cook 4 hrs
Once peas begin to soften add in 3/4 diced ham reserving 1/4 cup for presentation.
Continue to cook for 4 more hours adding more chicken stock or water to be sure peas are completely covered with at least an inch of liquid
Taste test and adjust seasoning as needed. Peas will soak up salt so taste and adjust often throughout cooking process
Serve when peas have completely softened. Ladle to bowls adding a few chunks of ham and some parsley to top. I do this because sometimes the ham loses flavor into the soup and get super soft. This way you can get a nice salty bite of ham. And let’s be real the parsley is just for color 😆

It’s been a crazy couple weeks. Friends passed, chemo week, and life just seemed out of control so I needed a break and some good old comfy food. This is one of my favorites

Cheesy Spinach, Potato, and Chicken Soup

Serves 6 (or 3 hungry bikers)

2 lg chicken breasts, diced
1/2 bacon, diced
1 lb little golden potatoes, diced
1 can French onion soup
1 sml pkg velveeta cheese, diced
2 pkg chicken gravy mix
4 cups chicken stock
1 lb raw spinach, chopped
1/8 cup (or to taste) kinder buttered steak seasoning (or you favorite seasoning like salt, pepper, garlic powder,onion powder etc)

In a soup pot render down bacon with chicken then drain off excess grease. Add remaining ingredients at store over a medium heat until it comes to a very low boil. Cook approximately two hours until potatoes are for tender that serve with nice crunchy French bread. It’s a very simple soup but there’s a very tasty soup. Definitely comfort food.

Ps all this could be cooked in a crockpot for 4 to 6 hours or in an Insta pot for about 30 minutes

Mushroom Swiss Burger w/Gravy Mayo
Serve 4 (or 2 hungry bikers)

Oil or cooking spray
2 cups sliced mushrooms
1 onion, minced
1lb COLD, GOOD LEAN ground beef
1 tsp garlic, minced fine
½ tsp salt
¼ tsp black pepper
4 slices GOOD Swiss cheese
1 tbs Mayo
2 tbs sour cream
1 tsp brown gravy mix (you can use more to suit your taste)
Good quality bread buns
Romaine lettuce leaves

In a medium pan over medium heat, sauté onions in 1 tbsp oil until brown, remove from pan and set aside.
In the same pan add 1 tbsp oil and the mushrooms, cook till tender, remove from heat and set aside In a medium bowl, mix together cooked onions, garlic, salt, pepper and very cold ground beef.
Blend with your hands, making sure everything is well incorporated, but DO NOT OVER WORK OR IT WILL BECOME TOUGH
Meanwhile, mix the sour cream, mayo, and brown gravy together in a bowl, and refrigerate until ready to serve.
Divide meat mix into 4 equal parts then each pat gently shape into patties, slightly thicker on the outside
Lightly brush the grill or pan with oil and heat to high – I mean really HOT
Place each patty on the grill or into the pan (you should heat a good sizzle sound if its hot enough) and cook for 3 to 4 minutes, then flip over and cook the other side for a couple of minutes cooking to the level you like
Just before they are done, spoon mushrooms on each burger and cover with a slice of swiss cheese
Allow it to begin melting but don’t over melt while in the pan or on the grill or the topping may slide off lol
Serve on toasted buns with gravy mayo and lettuce

Ranch Burgers and Taters

Serves 4 (or 2 hungry bikers)

1 lb ground beef
1/2 lb raw bacon, diced
1 med onion, diced
2 pkg ranch dressing mix
1/2-1 lb shredded cheddar cheese
Fried onions
5 lbs small golden potatoes, sliced
Hamburger buns
Sliced tomato
Sliced cheese (yes more cheese)
Lettuce

In a skillet partially cook you bacon. Not till crispy just till most the fat cooks out. Add in onion and cook until soft
In a mixing bowl dump all ingredients and mix well. Form patties. Set aside
Wrap foil on a cookie sheet and season potatoes with garlic powder, onion powder and salt and pepper to taste. Bake in the oven at 350 till fork tender
Meanwhile cook your hamburger patties in a skillet to desired temperature, I like mine med-well
Serve with your preferred condiments and toppings, ENJOY!

Fried Salmon with Dill Cream Cheese

Serves 4 ( or 2 hungry bikers)

1/2 cup butter
4 salmon filets
Old bay seasoning
1 cup whipped cream cheese
1/4 cup fresh chopped dill

In a med pan melt butter over a medium heat. Add salmon, skin side down. Sprinkle tops with old bay to taste. Cook 5 minutes or until sides begin to turn light pink. Gently slide a spatula under each filet and flip away from yourself so you don’t splatter hot butter on yourself.
Meanwhile mix the dill into cream cheese and set aside
Cook filets for 3-5 minutes then remove to plate. Spoon 1/4 cup cream cheese on each filet, sprinkle with a little more dill and serve. It’s just that simple but tastes amazing!
