The Biker Chick's Kitchen - 2 I'm just your everyday average biker chick who loves to ride, laugh and cook! This is a culmination of real, easy, road tested recipes that anyone can make.

This page is a collection of family recipes, pictures, and giggles. I was lucky to grow up with a mother who loved to cook and taught me everything I know. She taught me hundreds of recipes, some of which I have tweaked and decided to share.

PMS or not these are the best darn bite you’ll ever eat and it couldn’t be more easy to make

These have always been in our house and probably saved the life of many a man over the years lolol

PMS Bites
Make as man or as few as you need / want

Bag of Rolo candies (or any soft chocolate covered caramels)
Bag of mini pretzels
Pecans, peanuts, cashews, M&Ms, or whatever you like

Preheat over to 350°. Place parchment paper on a large cookie sheet. Place pretzels on parchment paper about ½-1 inch apart. Unwrap caramel candies and place on on each pretzel, large end facing down. Bake for 3 minutes – don’t over bake or they get messy. Remove from oven and carefully place a pecan or candy or whatever you choose into the middle of each semi melted Rolo and push it down a bit so it sticks. Allow to cool COMPLETELY then serve!!

This was my daddy's favorite pie, and I love making it and remembering how much fun we had eating it together!

Hunka Hunka Elvis Pie
Serve 6-8 (or 2 hungry bikers or 1 hungry daddy)

1 Readymade chocolate graham cracker pie crust
3 medium Bananas
1 cup Creamy peanut butter
1 cup Semisweet chocolate chips
2 cups cold Milk
2 regular boxes Banana instant pudding mix
1 tub whipped topping

Slice bananas into ½ inch pieces and layer ⅓ across the bottom of the pie crust, put the rest aside.
In a small pot mix and melt the peanut butter and 3/4 cup chocolate chips, stirring until smooth then pour mixture over banana layer.
Lay down another layer of ⅓ of the bananas.
In a mixing bowl, combine the milk and the instant pudding mix.
Whisk together for two minutes until it begins to thicken.
Fold in the ½ the whipped topping and pour over banana layer.
Finish with a layer of the rest of the whipped cream.
Garnish the top with the remaining chocolate chips (Or you can use bananas, shaved chocolate, what ever makes you happy)
Refrigerate for at least 3 hours and serve.

Key Lime Fudge Bites
Makes about 1 1/2 pounds

2 – 11 oz bags White chocolate chips (they don’t taste like chocolate but they are so good)
14 oz can Sweetened condensed milk
3 tbsp Lime zest, finely grated
3 tbsp Lime juice
1-2 drops Green food coloring (optional)
Additional lime zest for garnish (optional)
Graham Cracker crust (optional)
¼ cup Butter, melted
¼ cup granulated Sugar
1 pkg (about 9 rectangles) Graham crackers

Butter a large rectangular baking dish and set aside.
In a large heat-safe bowl mix the white chips and sweetened condensed milk.
Nuke for about 30 second then stir, repeat until everything has melted and is well combined.
Stir in lime zest and juice, and food coloring if using, mix well, quickly before it begins to firm up.
Pour the mixture into the prepared baking dish, smooth it out then place into the fridge for 2-3 hours or until the fudge is completely set.
Cut the fudge into 1-inch squares and serve with graham cracker.

**** Optional graham cracker crust
Preheat oven to 375° and line a 9x9-inch baking pan with aluminum foil and spray with cooking spray, set aside.
Smash the graham crackers until they are fine crumbs then add in the butter and sugar and mix well.
Press the mixture evenly into the bottom of the prepared pan.
Bake for 5-7 minutes or until the edges are lightly browned.
Remove from the oven and allow to cool while you prepare the fudge layer.
Pour fudge over graham cracker crust instead of into a baking dish, then allow to refrigerate and cut into squares as noted above.

Asian Chicken and Vibrant Veggies atop Egg Noodles

Serves 4-6 (or 2 hungry bikers)

2 small  chicken breasts, diced
3 chicken thighs, diced (
Or whatever you have. You could use beef for this too.)
2 bell peppers, preferably, orange, and red or yellow, diced
1lb small egg noodles
1 bunch of asparagus, diced
3 tablespoons cornstarch

In a skillet or medium heat, add a little oil and add your chicken  and brown over a little bit you’ll notice a lot of juice cook out. You don’t wanna get rid of those that’s gonna become part of your sauce.
Place your dice bell peppers into your crockpot and pour your chicken over the top juice and all. Cover and cook for two hours
Remove lid and sprinkle cornstarch all over everything and then stirring it in well so you leave no lumps. This helps make everything glisten plus it tightens up your sauce.
Add in your asparagus and stir, well, replace lid and cook another two hours on low to allow the asparagus to soften
Meanwhile, in a pot full of very salted water add your noodles and cook till done. Drain and removed to a serving bowl. Pour the noodles and serving bowl and the chicken mixture over the top of the noodles and you are ready to go. This is a delicious chicken dish. Your family will love.

I love this idea you could use so many different things instead of just cinnamon rolls you could use biscuits to fill with breakfast ideas or garlic bread gel filled with marinara and cheese and make a little pizza bites. Great idea.

Zesty Italian Beef and Pasta

Serves 3-4 (or 2 hungry bikers, ))

1 box of any kind of pasta you like, I wouldn’t suggest spaghetti or fettuccine
2 pounds beef sliced up for stirfry
Spices of your choice,
1 bottle of zesty Italian salad dressing, 

Put a large pot on the oil with enough salted water that it taste like the ocean. Bring it to a boil and add pasta to cook.
Meanwhile, seasoning up your meat with your spices, rubbing it in real well and mixing them all up get your hands in there and get them gooey once everything is well incorporated add a little oil to your pan. Bring it to a high heat and then add your meat. Don’t worry it’ll seem like it’s sticking or burning because of the brown bits that are collecting on the bottom of the pan, but don’t worry about that. We’ll take care of that a little later.
Once the pasta is done, cooking drain it, but don’t rinse it. You wanted to stay hot. Return it to the pot that you boiled it in and put it on top of the stove with no heat.
Pour your bottle of zesty salad dressing over your meat and stir well so everything is coded once that’s done. Pour all of it into your pasta and mix well this is so simple. Even my husband could do it, just kidding. He’s a pretty good cook. I hope you enjoy.

BCK cooking tip:
Pork loves vinegar. Not a lot but just enough. A very cool way to cook, ribs or any kind of pork butt, loin, even pork chops is to take a small plastic bottle of vinegar for a littl ouch (you can use a glass bottle If that’s all you can find,) and add salt, pepper, and garlic powder to it. Then while the pork is cooking, drizzle some of the mixture over the pork several times. The vinegar helps tenderize the meat and salt pepper and garlic are just a perfect mix for a simple seasoning. You can’t, of course put any other kind of seizing you like in there, but this is the easiest way I found. Hope this helps!
