Venison neck roast pastrami.

It turned out spectacular!

Brined for 5 days:
3 quarts water
195 grams salt roughly ¾ cup
1 oz by wt pink curing salt sodium nitrite
3 Tablespoons pickling spice
2 cups dark brown sugar
1 large yellow onion sliced
3 dried bay leaves
1 bulb garlic halved horizontally

Rinsed thoroughly and braised for about 6 hours in a foil pan with aluminum foil over the top in a 250 degree grill (no smoke yet). You want the roast to end up being just like pulled pork, and the braise ensures it doesnt get dry.

Braise:
1/3 water 1/3 beef stock 1/3 red wine

Soak applewood chips in water for an hour and take the foil off your roast. Smoke your roast for a couple hours.

Observations:
We actually didn't think the smoke was all that great and probably would have just not smoked the roast at all, there was plenty of flavor and the roast was not too salty at all!

Probably could have knocked a day off the brining time. It was thoroughly cured but not too salty

We also decided against coating the roast with the typical coriander/black pepper coating.

The evening yesterday started great. Pasta was made. Lasagna was glorious, excess noodles were set upon the rack for drying. The chickens were more excited earlier in the morn.

Now we know why...

The pasta that was drying just decided to break up all over everywhere... but we think it was the lack of humidity or lack of gluten development.

The dried lasagna noodle shards cooked up nice so that is good for the noodles that were not all over the floor.

Plan is to smoke it afterwards, then shred it like shredded pork or beef.

We have no hope of making pastrami as good at Rustic Nomads, but we will try!

Never stop learning!

Crystal and Robert took a Blacksmithing class a couple weeks ago, and learned some new skills. The class was very informative for only being two hours, and our instructor Otto was very good at teaching.

Knowledge like this is going to come in very handy when a need will arise to repair equipment and tools and to create replacement parts for our farm equipment or make tools.

We already have signed up for a full day class next month, with plans for taking more like a forge-building class to build our own forge. One goal is to take a all-day one-on-one course to create some hardware for a surprise project later this winter.
