Potato Salad

Ingredients:
1 5lb bag of red potatoes
½ bag of celery
6 eggs
1 yellow onion
Mayonnaise
Yellow Mustard
Relish
Celery Salt
Salt and Pepper

Directions:
1. Peel the 4 lbs of the 5 lbs bag of red potatoes. Cut them into small cubes. Place them in a large pot of water and add salt to the water. Boil them to almost soft (al-dente). When the potatoes are done, drained and set aside in a large bowl to cool.
2. Use half a bag of celery, wash and deribbed them. Cut into tiny pieces. Add to the bowl of potatoes.
3. Boil 6 eggs for 10 minutes. Drained and cool in cold water. When eggs have cooled, take shell off, cut in half and crumble the egg yolks into the bowl of potatoes. Dice the remaining egg whites and place them into the bowl of potatoes.
4. Dice 1 yellow onion into very tiny slices and add to bowl of potatoes.
5. Add 2 cups of mayonnaise to the bowl of potatoes (you can add more mayonnaise for the consistency that you like).
6. Add 1 teaspoon of celery salt to the bowl of potatoes. (you can add more per your taste)
7. Add yellow mustard and relish to taste
8. Add salt and pepper to taste to the bowl of potatoes.
9. Mix all ingredients and chill overnight.

Antipasto Salad
Ingredients
• 1 pound rotini pasta
• ½ pound Asiago cheese, diced
• ¼ pound Genoa salami, chopped
• 1 container of parmesan cheese
• ¼ pound pepperoni sausage, chopped
• 3 medium tomatoes, chopped
• 1 medium red bell pepper, diced
• 1 medium yellow bell pepper, chopped
• 1 (6 ounce) can black olives, drained and chopped
• 1 bottle of Olive Garden salad dressing
• 3 scallions (green onions)
• Peperocinos
• Red onion
Directions
1. Make the antipasto salad: Bring a large pot of salted water to a boil. Add shell pasta and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain, run under cold water to cool pasta, and drain again. If you don’t rinse the pasta with cold water, you are a moron and your pasta will stick together.
2. Transfer drained pasta to a large bowl. Add all the remaining ingredient to the pasta salad. Add half a bottle of the Olive Garden salad dressing mix and stir until ingredients are thoroughly mixed. Cover and refrigerate overnight, but if you just can’t wait because you’re a moron, refrigerate for at least 1 hour.
3. To serve, pour the remaining Olive Garden salad dressing over the chilled pasta salad and mix until well combined.
