Rabbit Roast 🍂🐇

On the menu tonight we have bacon wrapped rabbit saddle served over a bed of seasoned potatoes.

The saddle comes from the back of the rabbit and includes the tender loins that run along either side of the backbone. It’s one of the most tender cuts of the rabbit, but because the meat is naturally so lean, I’ve always loved wrapping mine in bacon. It adds wonderful flavor and a little extra fat to help hold in moisture as it roasts.

I kept the seasoning pretty simple with salt, pepper, and garlic powder before wrapping the saddle in bacon and placing it over diced onions and potatoes. The saddle has always been my absolute favorite cut and I’m really happy with how this one turned out.

With a busy day ahead, it’s nice knowing supper is already taken care of for the boys tonight. 🤎

Breeding Season Is Near 🤞🏼

One of my favorite things about the cooler months is getting back into breeding our rabbits. This pretty lady gave us a whopping thirteen kits with her very first litter and I’m definitely looking forward to seeing what she produces this season.

For those who are new to raising rabbits, breeding takes a little more than simply introducing a buck and doe. The doe has to lift for the buck to successfully breed and I personally aim for three fall offs during each breeding session.

Rabbits are also induced ovulators which means breeding them actually stimulates the release of eggs rather ovulation happening on a regular cycle. Even with successful fall offs there’s no guarantee of pregnancy…

I will say that palpation is a great way to help determine whether a doe is pregnant around 10 to 14 days after breeding them. I’ll be the first to admit that I’m not the best at it and still practicing, so there’s always a little waiting and anticipation to see if we have kits on the way.

I’m definitely looking forward to having those nesting boxes full of little ones again! 🫶🏻

Time For Sunshine 🌤️

Fresh grass, warm sunlight, and lots of little things to peck at.

The quail are spending some time outdoors today, scratching through the grass, hunting for little bugs, and enjoying the opportunity to forage naturally.

I’d say they’re making the most of it 👏🏼

Monday Mornin Blessings 🌿

A fresh cup of tea and a great start to a brand new week

The rabbit cages are clean, the quail are taken care of, and we’re ready to make this Monday a productive one.

There’s plenty more to be done around the house, but getting those morning chores behind us sure feels good! Now to see how much we can accomplish before the day gets away from us…

What’s keeping y’all busy this morning?

Goldenrod Oxymel 💛🍯

A little sunshine gathered from the fields and tucked away in lovely little jars

I’ve been gathering goldenrod bouquets while they’re blooming, and today I put some of those beautiful yellow flowers to good use by making homemade oxymel. An oxymel is a traditional herbal preparation made with apple c***r vinegar and honey. The vinegar helps extract compounds from the herbs while the honey balances its tartness, making it a sweet and tangy herbal tonic.

Here’s how I made mine 🌼

I gathered fresh goldenrod flowers and tender leaves, let them wilt a bit to reduce moisture, and loosely filled my jars halfway. Then I added equal parts raw honey and apple c***r vinegar, making sure everything was submerged. Now they’ll steep in the refrigerator for two to four weeks before straining them.

I know I’ve mentioned it before, but for those who didn’t know, goldenrod is used to support urinary health and encourage urinary production. It also contains antioxidant and anti-inflammatory compounds. One of my favorite ways to enjoy goldenrod is a simple cup of freshly brewed tea, but I’m excited to add this oxymel to the list!

Have you ever made an oxymel?🌾

We made it 🙌🏼

Our house is still without electricity or running water, and there’s no cell service in the area, but we’re all safe and making the most of it. If nothing else… we’re getting a little more outdoor cookin’ in!

We’re so thankful our area was spared the worst of what the storm brought. Our hearts and prayers are with those who weren’t as fortunate and facing significant damage. Praying for strength, comfort, and recovery for everyone affected.

As for now, supper is ready ❤️🍗

An evening to remember 👏🏼

With Hurricane Isaias headed our way this evening, we spent yesterday making the most of what we had. We moved the rabbits, got the quail settled and made sure everyone was situated. And just like that, we’ve got ourselves a makeshift barn.

It’s certainly not perfect, but keeping the animals as safe and secure as possible was our priority. Sometimes you’ve gotta make do with what’s around you.

I’m especially thankful for the helping hands, the wonderful friends who’ve opened their home to us, and the sweetest neighbor keeping an eye on everyone while we’re away.

We’re truly blessed with such good people around us.

As we finished up preparations, I managed to catch this breathtaking sunset. Nothing quite like a beautiful sky to bring a little peace after such an eventful evening.

We’re safe, we’re grateful, and we’re keeping everyone in the path of hurricane Isaias in our prayers 🫶🏻

The Calm Before the Storm 📖

There's a certain kind of stillness in the air before a major storm rolls through.

As we prepare for the rough weather ahead, I’ve found myself taking a little extra time to appreciate the quiet, tend to what needs tending, and pray over the hours to come. There’s comfort in knowing that even when the skies grow dark and the winds begin to pick up, our Lord remains stead fast.

We may not know what tomorrow holds, but we can rest in knowing whose hands hold it.

My heart and prayers are with every family preparing for the storm. I pray the Lord places his hand of protection over our homes, shelters those who have no where safe to go, and watches every person and animal in its path. May he give wisdom to those making difficult decisions, strength to those helping their neighbors, and peace to every anxious heart.

Please prepare while there’s still time, check on those around you, and above all, keep one another in prayer.

“God is our refuge and strength, a very present help in trouble.” Psalm 46:1 KJV

Come As You Are 🌿

Maybe you’ve raised rabbits for twenty years, or maybe you’ve never held one. Maybe you can fill a pantry from memory, or maybe you’re still figuring out what you’d even like to learn.

I never want this little corner to feel like a place where we have to prove what we know.

Bring your questions, share your lessons, and stay curious about the things you haven’t learned. There’s room for the old hands, the brand new ones, and everyone somewhere in between them.

So come as you are. We can learn from each other 🤎

Boiled Quail Eggs ✨

Our favorite little snack around the house.

We love quail eggs just about any way they’re cooked, but boiled with a little salt and pepper might definitely be taking the win for us. They’re packed with protein, perfectly snack sized, and around here a bowl never lasts for very long.

Peeling them though? That usually takes a bit longer than eating them. Those tiny speckled shells are tedious, but they’re well worth the effort.

Simple, delicious, and somehow we can never seem to make enough 🤍
