๐ Creamy Chicken and Spinach Casserole ๐ฅฌ๐ง๐
Tender chicken, garlicky wilted spinach, and a rich cream cheese sauce baked under a golden mozzarella and Parmesan crust โ this is the low-carb casserole that feels completely indulgent.
Ingredients:
4 boneless, skinless chicken breasts, cubed
4 cups fresh spinach
4 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon butter
8 oz cream cheese, softened
1/2 cup chicken broth
1/4 cup sour cream
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper to taste
1 cup shredded mozzarella, divided
1/4 cup grated Parmesan
Fresh thyme for garnish
Instructions:
1. Preheat oven to 375ยฐF. Season chicken with Italian seasoning, garlic powder, salt, and pepper.
2. Heat olive oil in an oven-safe skillet over medium-high. Sear chicken 5โ6 minutes until golden. Remove.
3. Melt butter in the same pan. Sautรฉ garlic 30 seconds. Add spinach, cook until completely wilted and liquid evaporates.
4. Add chicken broth, cream cheese, and sour cream. Stir until smooth. Simmer 2 minutes.
5. Add Parmesan and 1/2 cup mozzarella. Stir until melted. Return chicken, mix well.
6. Top with remaining mozzarella.
7. Bake 20โ22 minutes until golden and bubbly.
8. Garnish with fresh thyme and serve.
