Baked Thai Salmon

1.) 6 x 6 oz sockeye salmon fillets
2.) Pinch of salt
3.) 1/2 cup + 2 tbsp Thai sweet chili sauce
4.) 2 - 3 tbsp green onions---chopped
5.) Cooking spray


1.) In a large baking dish, lay down salmon fillets in a row. Each fillet - sprinkle with a pinch of salt and top with 1 tbsp Thai sweet chili sauce. Brush or rub with your fingers to coat fish with sauce evenly on top, bottom and sides. Cover and let marinate in the fridge for at least 2 hours or overnight is the best.

2.) Turn on oven's broiler on High and position top oven rack 5" - 6" below the heat source. Line large baking sheet with unbleached parchment paper, spray with cooking spray and place salmon fillets skin side down. Coat with remaining marinade from the dish.

3.) Broil for 8 minutes, rotating baking sheet once. Remove from the oven and brush top of each fillet with 2 tsp of Thai sweet chili sauce. Return to the oven and broil for another 5 minutes or until salmon has caramelized. Serve hot garnished with green onions, extra sauce (if desired) with brown rice or quinoa on a side.

Barbecue Shrimp ●SHARE ●SHARE ●
In New Orleans, when we say we are going to have barbecue shrimp that does not mean that we are putting them on the pit. This is how we do it

1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon dried basil 1/2 teaspoon dried thyme 1/2 teaspoon dried rosemary 1/4 teaspoon cayenne pepper 1/3 teaspoon paprika 1/2 cup butter Butter Salted
Splash some beer of your choice
4 cloves garlic, minced 1/4 cup beer, room temperature
1 tablespoon Worcestershire sauce 1 pound medium shrimp - peeled and deveined or with shell on. Either way is good
Shrimp Large
salt to taste

In a small bowl, stir together the garlic powder, onion powder, basil, thyme, rosemary, cayenne pepper, splash of beer and paprika. Set aside.
Melt the butter in a large skillet over medium heat. Add garlic; cook and stir until fragrant, about 1 minute. Add the shrimp and cook for a couple of minutes. Season with the spice mixture and continue to cook and stir for a few minutes. Pour in the beer and Worcestershire sauce; simmer until shrimp is cooked through, about 1 more minute. Taste and season with salt before serving.


Open until 5. Stop in and pick up fresh fish for dinner!!!! We have the best fresh Haddock, Skate ,Salmon and more!!
