Fall is here, and no time is better than now to start thinking about filling up your freezer. The pandemic continues to disrupt consumer supply, including meat processing. A recent Politico article discussed how COVID-19 has disrupted meat processing. Nearly all meat processors are backlogged with work making all beef processing in high demand.

The good news is we planned ahead and reserved appointments for beef processing this fall. Our steers are fat from summer grass and are ready for our regular fall beef deliveries. Our beef will be processed in November. If you want a side of beef for your freezer, then consider ordering early. We are taking reservations now for those beef that will be processed this winter. These beef shares will likely sell out.

To me, when the pumpkin spice beverage commercials show up on the television commercials, this is the harbinger of fall. I know like clockwork that certain things are eminent like scarves, leaves falling from the trees, and fall beef. Just like everything in 2020, the COVID-19 pandemic has disrupted our everyday life, including fall beef.

Our steers are fat from summer grass and are ready for our regular fall beef deliveries. Unfortunately, many large meat processors were negatively affected by virus infections, which reduced total meat processing capacity. After some larger plants closed due to COVID, those meat processing contracts were then shifted to smaller meat processors.To help with the overload to the small processors, Utah Department of Agriculture even made rule changes to allow private smaller processors to cut meat for retail sale. Increasing small processors for the retail markets helped to keep meat in stores, but backlogged private sales for sides of beef like ours.

So no fall beef? We only receive a few fall processing slots from the butcher; most of our beef will now be processed in February. We hope earlier dates will become available, but we thought letting customers know now would be helpful.

Most of our fall meat sales for 2020 will be delayed. If you want a side of beef for your freezer, then consider ordering early. We are taking reservations now for those beef that will be processed this winter. These beef shares will likely sell out. Please email me with any questions.
