I've got 2 dry traditionals sitting in secondary. My first Brews! Unsure what I want to do with them. Leaning toward just backsweetening, pasteurizing, and bottling since they're my first brews. Anyone got any different ideas?

New brew! I love the DARK color and am excited to see how it ferments and then clears

6 Tbsp of Lavender Earl Grey tea brewed for 5 mins and then strained
3 lbs of clover honey
5g of Fermaid O
1 packet of EC-1118

Initial gravity of 1.112 and potential ABV of about 15%!

Week 4 update on my first 3 batches! For using EC-1118, I was expecting them to be closer to 1.000 and I'm assuming it's due to either no nutrients added, or nutrients added too late.. I gave them all a swirl and am going to let them sit and ferment/degas for another week and measure again. All 3 are definitely drinkable though! My favorites are the Clover Honey Traditional and the Peach Lemon Rapsflower Mead. Let me know what you think! I'm hoping my hydrometer math is correct.

Batch 1: Clover Honey Traditional
- 3 lbs Clover Honey (Glory Bee)
- Spring Water
- 1 packet of EC-1118
- Fermaid O added on day 4 (didn't have any until then)
- Starting Gravity of 1.114
- 4 week gravity of 1.010 (13.65% ABV)

Batch 2: Dark and Robust Traditional
- 3 lbs Dark and Robust Honey (Thrifty Bee)
- Spring Water
- 1 packet of EC-1118
- Starting Gravity of 1.112
- 4 week gravity of 1.004 (14.16% ABV)

Batch 3: Peach Lemon Rapsflower Mead
- 3 lbs Rapsflower Honey (Breitsamer Honig)
- Brewed Peach Lemon loose leaf tea (Private Selection)
- 1 packet of EC-1118
- Starting Gravity of 1.118
- 4 week gravity of 1.026 (12.08% ABV)

I know it's because this account is so new, but not being allowed to participate in the Mead group sure makes me feel jaded toward the group and its admins. I am super happy so far with my first 3 batches. All 3 started 14 days ago, and still fermenting vigorously with very active airlocks. I've been devouring mead content from different creators, especially City Steading Brews (who are incredible), and am getting a lot more knowledgeable about the process and what to expect. Can't wait to rack these 3 simpler meads and start more batches and experiment a little.

Batch 1: Traditional with 3 pounds Dark & Robust honey & EC-1118

Batch 2: Traditional with 3 pounds of clover honey & EC-1118. 0.75g Fermaid O added on day 4 because it wasn't very active. I would have added it earlier but had to wait for it to arrive.

Batch 3: Peach Lemon tea with 3 lbs Rapsflower honey & EC-1118. (excited for this one)

To add nutrients, or not to add nutrients? I started 3 batches on March 30th. Didn't know that yeast nutrient was usually used, so I had to order some and it didn't get here until today. 2 of my batches really seem to be fermenting well. The 3rd is fermenting, but not as vigorously as the other 2. Should I add nutrients to just the 3rd? All 3? None? What do y'all think?
