Two of the easiest, budget friendly meals you can make, and Kim and I loved them!

Old School Hamburger Helper:
- Hamburger Helper - $1.99/box (many varieties, we love the cheeseburger macaroni)
- Ground Beef - $6.99/lb.

Cooking Tip - Not much to add here, just follow the directions on the box. Add a tablespoon of sour cream to make it creamier. You can also place it in a skillet and bake it to crisp the edges. You can also use any ground meat you like. Try ground sausage in the lasagna one!

Lazy Man's Chicken Pot Pie in a Skillet:
- Two Cans Chunky's Chicken Pot Pie Soup: 2/$4
- One Can of Pillsbury Grands Biscuits: $1.99
- One Rotisserie Chicken, shredded - $4.99

Cooking Tip - As usual, I am using a skillet for this. Place soup in first, then add shredded chicken on top. To finish it off, cut the biscuits in quarters and strategically place on top to cover the entire dish. Bake at 400 for 20 mins, then flip biscuits over for another 10 mins or until golden brown - that way they’ll be crisp on both sides.

Skillet Enchilada Pasta:
- Mini Penne Pasta - $0.99/box
- Green Peppers - $1.99/lb
- Red/Yellow Peppers - $2.99/lb
- Black Beans - $0.99/can
- Red Enchilada Sauce - $0.99/ca (x2)
- 1 pack taco seasoning - $1.25

Cooking Tip - Cook pasta separately, al dente. In a skillet combine chopped peppers, red enchilada sauce, beans and taco seasoning, bring to a simmer. Add cooked pasta. If you want to add protein, add Meatloaf Mix (my preference, can use ground hamburger or sausage, brown separately) - $5.99/lb.
Price - $10 ($16 with protein added.)

Garlic Butter Pierogies w/ Onions:
- 1 Box Frozen Pierogies (many varieties): $2.99 (16oz)
- Garlic Butter - $3.99 (I prefer Kerrigold if you can find it.)
- Two Sweet Large Onions - $2.50

Cooking Tip - This is a very simple meal. Boil the pierogies until they float and drain. In the same pot, add a stick of butter and brown the onions (sliced or diced) until they become soft. Add the pierogies back in and stir.

- Boneless Spare Ribs - $1.99/lb
- Sweet Baby Ray’s - $2.29 (18oz Bottle)

Cooking Tip - Cook 4-6 hours. Only use half the BBQ sauce in the crock pot, saving the rest for when you serve it. If you want to spend a little more, you can grab some Fresh Express Bagged Cole Slaw and Hidden Valley Ranch Cole Slaw Dressing and make a slaw yourself, but make it a day earlier (approx $6 together.)

- 1 Pork Loin: $5.99 (18oz-22oz)
- Tuscan Kitchen Ravioli - $3.99

Cooking Tip - This is a very simple meal and hands off. For the first hour in the oven cover the pork loin with foil, then uncover to crisp it. The ravioli come in many varieties - choose one of your liking.

We know we will be overindulging this weekend with Valentine's Day and the better half's birthday, so I am keeping this week's ideas light and diet friendly.

Meals are based on chicken breast on sale for $3.99/lb at Market Basket starting tomorrow, February 15th.

(Biased sale: Stonyfield's Brown Cow brand yogurt is on sale for $0.89/cup. This yogurt is excellent!)

Grilled Chicken Salad
- Chicken Breast - $3.99/lb - size varies; $5-$6.
- Fresh Express Salad Blends - $2.29 (7 different varieties)
- Salad Dressing - $2 per (MB Brand, your choice)
Cooking Tip - Not much to add here, but we like to throw any type of leftovers/scraps in our salads; Look in your fridge and cabinets; Add cheese, dried cranberries, nuts, etc. Makes the salad more filling.

Price - $9.50 to $10.50

Crockpot Fajitas:
- Chicken Breast - $3.99/lb - size varies; $5-$6
- Salsa - 1 jar, 16oz - $1.99
- Flour Tortillas - 1 pk, 8ct - $1.99 (if not a tortilla fan, you can also put over rice.)
Cooking Tip - Cook on low, 6-8 hrs until chicken is "fork shred" tender. Place in colander, drain all juices and put back in crock pot. Depending on your dressing choice, you can use it on these!

Crock Pot Teriyaki Chicken Thighs Over Rice:
- Bone In Chicken Thighs - $1.99/lb - size varies; $5-$6.
- Teriyaki Sauce - $3.39 (or a sauce of your choosing)
- Hannaford Branded Rice (your choice) - $1 per package

Cooking Tip - IMO chicken thighs provide the best flavor, especially in a crock pot; Cook 4-6 hours. If you want thick juice from the crockpot to pour over the chicken and rice, place in pot on stove top and make a corn starch slurry - mix it into the juices, stirring as you go.

Price - $9.39 to $10.39

Gnocchi Skillet:
- 1 pkg Shelf Stable Potato Gnocchi: $2.99
- Ground Turkey - $3.39/lb, - 1 lb pack
- Crushed Tomatoes - $1.52/28oz can - 1 can
- Diced Tomatoes - $0.99/14.5oz can

Cooking Tip - I love cast iron skillets. Brown the ground turkey, seasoning to taste. Add crushed tomatoes, drained diced tomatoes. Once simmering, add in Gnocchi. Continue to season to taste with Italian seasoning

Want to spice it up? Add red pepper flakes!
