Dried persimmons are typically made with Hachiya Persimmons, the pointy astringent kind. But they can also be made with Fuyu Persimmons, the squatty kind!

Fuyus have less sugar compared to the Hachiya, that’s why the signature sugar bloom is not as thick as the dried persimmons made from Hachiyas. Dried Fuyus are also more vibrant and orange, instead of dark brown/black like Hachiyas. The dark color comes from the tannins, which is also why Hachiyas are very astringent when unripe.

Flavor wise, I would say dried Fuyu persimmon retains a little more fresh persimmon flavors instead of a deep, figgy, caramel flavor. Both delicious in their own way!
