And just like that we’re down to ‘baby’ batches. Thank God we had the additional 45 gallon pasteurizer this season to process milk 6 days a week, sometimes twice a day! 😳
…
We’re praying hard to install a 100 gallon pasteurizer this winter to cut down make days to 3 times a week. I’m sad to report we’re still outgrowing our ever expanding production but over the moon excited at what we’ve accomplished in such a short time! 🤩
…
We added an energetic second milker this season and the most extraordinary assistant cheesemaker. We ventured into new markets, events, and tasting events. Our team continues to grow, together, seamlessly! Super proud of everyone involved. 😊

Truly blessed on all sides. Some days I question everything, I guess I was programmed that way. But some days little sparks of hope show up.
…
Many countless hours were spent during the CAIC mentorship program and we’re definitely seeing the results! We now have rack cards which have been out of reach for over a decade.
…
Screaming THANK YOU from Virginia!
