There’s a different level of respect you gain when you’re on the other side of the table.

Showing up week after week, hauling gear, prepping product, dialing things in, talking to every single customer—it’s real work. The kind you don’t fully understand until you do it yourself.

We’re still early, but getting a small taste of that rhythm has given me a lot of appreciation for the vendors who make this market what it is.

For our original waitlist folks - we haven’t forgotten about you! We are still fulfilling orders in the order they were received. And we are about one harvest away from being fully caught up!

For this week, waitlist pickups will be by confirmation only. If yours is ready, we will reach out directly to schedule your pickup at the market. If you haven’t heard from us yet, you’re still in line! We’re simply not releasing orders until they are ready. Watch your inbox.

We will have a limited amount of salt available for patrons at the market after all confirmed orders are accounted for.

Thank you for sharing our story Mobile Baykeeper!

King has fond memories of swimming in Mobile Bay as a child. He hopes that one fine day he can harvest water from the shores of Fairhope and create a salt that does his home waters proud. He is aware of the salt marshes that have long existed in Mobile Bay and is keen to learn more. There is one huge marsh that sits along the western shore of the Bay, known as the Deer River salt tract, which spans almost 300 acres and is rich in habitat. In the Mediterranean, and in parts of France, the farmers harvest salt from these types of marshes, with the flakes forming on what is known as salt tables.

But King has no illusions about the challenges facing Mobile Bay.

Today, he says, when you see someone swimming near Fairhope Pier, it’s usually a tell-tale sign that they’re not local — a fact he finds heartbreaking.

“But yeah, I really hope that at some point, Fairhope Salt Company can get water from Fairhope,” he says. Until then, we’ll just savor the taste of the Gulf.

It’s been a couple months since our last post.

During that time we’ve been heads down in the greenhouses watching trays like this slowly turn into beautiful

I’m proud to say we just completed our largest harvest to date, and we’re starting to schedule pickups for this Friday.

If you haven’t received an email yet, don’t worry. We’re still harvesting and packing as fast as we can, and this stretch of warm Gulf coast weather has the next batches coming along even faster.

We also have some exciting updates to our event schedule as we head into spring. Looking forward to sharing the dates soon.

A salt flake up close is a little masterpiece.

What you’re seeing here is an up close and personal of Fairhope flakes. Some of our biggest and best. These thin crystal plates naturally layer and stack as the batch finishes. Light, brittle, and airy… but with a crunch that completes any dish.

Today is a proud one for us.

Our story is officially live with Gulf Coast Media - both online and in print in The Courier.

What started as a few buckets of Gulf water, a backyard setup, and a deep respect for this coast has grown into something we never could have imagined. This piece and the incredible photos(shoutout to ) captures the heart of what we do: patience, place, and an uncompromising commitment to quality over speed.

We’re grateful to for taking the time to understand the process, the care behind every batch, and why this work matters so much to us.

Who is Fairhope Salt Company? Meet the Kings.
We are Trey & Gabrielle, the husband & wife duo behind the saltworks.

Our connection to the coast runs deep, we even got engaged and married on these beaches! Living on the Eastern Shore, it only feels natural to look toward the Gulf, the tides, the air, the slow rhythm of coastal life and want to share that with others.

From hauling buckets of water (kudos go all to Trey on this front), to harvesting crystals, to grading and washing the salt, to packaging and labeling, every batch is made by the two of us. Often times with kids in tow, a dog underfoot, and a good bit of coastal chaos mixed in.

We believe great salt should tell a story. Ours is about family, stewarding what God has given to us in our beautiful coast and doing things the right way, even if it takes more time.

We are so grateful to share a little piece of that with you, one jar at a time! Thank you for being here!
