Remember this word when buying Extra Virgin Olive Oil: Polyphenols
Quite often when consumers go looking for "olive oil", their primary focus is "how does it taste?" While we certainly want our food to "taste" good, I can not emphasize enough the importance of what's "inside" your olive oil that matters as much as the "taste". The truly magic ingredients inside your olive oil are called Polyphenols. These magic ingredients are know to help prevent blood clots, reduce blood sugar levels, and lower heart disease risk. They may also promote brain function, improve digestion, and offer some protection against cancer.
How this relates to YOUR olive oil is the following. Extra Virgin Olive Oil (not olive oil) has much, much higher levels of polyphenols. Furthermore, the longer your even Extra Virgin Olive Oil sits after harvest and is potentially exposed to light and air, the lower and lower amount of polyphenols remain.
As I recently reported, many of the "olive oils" you find in your grocery store have been on the shelves for over a year and are completely devoid of any health benefits and certainly very little or no polyphenols remain.
All of this and so much more are reasons to know your extra virgin olive oil supplier, ask for their polyphenol analysis if available, and certain know how long it has been since their olives were harvested and pressed.

A late freeze in April 2021 resulted in many olive blossoms being lost and limiting the total volume of olive oil that could be produced.
