We have been busy here on our Fallbrook property as we’ve worked hard to develop new crops of Farm Fresh Food. Our goal is to produce farm fresh food in a responsible, healthy, and sustainable way for our family and you, our customers. One of the first endeavors in our new enterprise is pastured poultry. Simply put, pastured poultry is a method of keeping chickens in movable pens out in the field

Bone broth! It's the newest thing for our household. Using Farmtable broiler bones and backs with a variety of coarsely cut veggies, we make a thick, nutrient fortified broth over the course of 10 hours in the slow cooker. Every 10 years or so, we do a major pruning of our avocados, taking the branches back to the center trunk. The resulting growth is greener, more vibrant, and ultimately more fruitful.
As with our pruned trees, so can life's peaks and valleys help refine us into people of character. Strength of character and wisdom to discern goodness often result from these life defining experiences. If you're in the valley, keep your eyes on the peak ahead. It will come my friend! Such a powerful life metaphor from the farm!

To butterfly a whole chicken, remove the backbone from neck to tail. Open and push down the rib cage to flatten the bird. Season with your favorite poultry rub and let chill for a couple hours. Grill skin side down over in-direct medium heat for 20 minutes then flip and go another 15-20 minutes. Pull off when skin is crispy and internal temp is 170. So delicious and simple. Above instructions are for a 4 lb bird. Add roughly 5 more minutes per lb. Enjoy!

The finished scramble...local eggs, red bells and tomatoes from our garden boxes, Russian kale and brown onions from in Fallbrook and Farmtable Direct pastured chicken.
Cooking tip: have a bag of cooked chicken in the freezer all the time to whip out for protein additions to any meal.
