MENU OF THE WEEK:

NEW JERSEY GAME DINNER:

I recently catered a game dinner for a group of ten men all of them hunting enthusiasts. As I come from this stock, I was super excited to partake in the event. The host supplied the pheasent, duck and venison, I supplied my smoking techniques, creativity, and a top notch team of servers. The pre-castro ci**rs and Chataeu Haute Brion 89’ were in the mix.

Hors Deouvres:
-Housemade Wild Duck Prosciutto, Lignon Berry, Pumpernickle, Cress
-Smoked Trout, Horseradish Cream, Sunburst Trout Egg, Chive, Toast Point
-Littleneck Clams Casino, Applewood Smoked Bacon, Red Chili, Lemon

DINNER:
1st Course:
-New Jersey Sea Scallop “Corsini”, In the shell

2nd Course:
-Wild Venison Tartar, Soft Quail Egg, Cornichon, Dijon, Pickled Shallot, Micro Herbs

3rd Course:
-Creamy Pheaseant Hash Ala “21”, Mornay Sauce, Black Rice, Bloomsdale Spinach

4th Course:
-Rustic Elderberry and Apple Tart, Vanilla Bean Ice Cream.
