Gluten-free bread doesn’t fall apart because it’s “missing gluten.”
It falls apart when structure isn’t intentionally built.

Unlike wheat bread, structure in gluten-free baking doesn’t come from kneading or dough strength, it’s created through a system working together before and during the bake.

That system includes:
• Psyllium to create elasticity
• Enough hydration for starches to gel
• A balanced flour + starch ratio
• Strong early heat to set the loaf before collapse

When one of these is off, the bread struggles, no matter how good the recipe is.

Once you understand why gluten-free bread works, troubleshooting becomes easier, confidence goes up, and results become consistent.

The right oven environment is what changes gluten-free bread.

There are a lot of things that affect gluten-free baking, but even good dough can fall flat if the oven isn’t set up to support it.

Unlike wheat dough, gluten-free dough needs strong, immediate heat and steam the moment it goes into the oven.

🔥 Heat builds structure. A fully preheated oven, especially one with a baking steel, delivers the energy gluten-free dough needs for real oven spring. Without enough heat, the loaf can set too slowly or bake up dense.

💨 Steam keeps the crust flexible during the first phase of baking. That moisture delays crust formation so the bread can fully expand before it locks in place. No steam means a tight crust and limited rise.

This is why oven setup matters just as much as ingredients and technique. You can do everything right and still miss the result if the oven isn’t doing its job.

Once the steam phase ends, venting the oven allows the crust to dry, color, and crisp, creating that bakery-style gluten-free finish.
