This short video covers some of the changes that we made with In shipping our Alcorn's Sausage Summer Sausage, we also included a short article. All of our products are 99% natural, without all the garbage and fillers that are added to most meat products. We had a couple family members tell us that they received a sausage that had a couple small spots of mold on the outer casing. The mold that forms on the casing is a natural penicillium that forms on cheese; you also see it growing on salami. We started packaging the sausage with a sleeve with a very light amount of organic sunflower oil on the outside of the casing, which is a natural mold inhibitor. You can also wash the out side of the casing with 1tsp salt to 7tsp of water, wipe the outside of casing and let dry. or you can Simply dip a cloth in vinegar and use it to wipe down the mold on the casing. https://tasteofartisan.com/green-mold-on-salami/
