Ingredients:
For the cheesecake filling:
- 8 oz 226g cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
For the cookie dough:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
Instructions:
1. Preheat oven to 350F 175C. Line a baking sheet with parchment paper.
2. For the cheesecake filling: In a bowl, beat cream cheese, sugar, and vanilla extract until smooth. Transfer mixture to a piping bag and refrigerate.
3. For the cookie dough: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Fold in chocolate chips.
5. Scoop a tablespoon of cookie dough and flatten it in your hand. Pipe a small amount of cheesecake filling in the center, then wrap the cookie dough around the filling, forming a ball. Place on the prepared baking sheet.
6. Bake for 12-15 minutes, or until the edges are golden brown. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
