So we're going to try crafting an easy summer drinker here soon. A strawberry/kiwi American wheat beer. Then there are rumors of another beer... Something possibly with blueberries and a pancake after taste. Can we do that?

When you make a beer of around 5% ABV, it is common to pitch around 70-120 billion yeast cells to complete fermentation. Bigger beers require significantly more because the alcohol created by the yeast actually becomes toxic for the yeast cells which can halt fermentation prematurely. This weekend we are brewing 2 very big beers which will require about 1 trillion yeast cells between them. Yup. 1 trillion. Mwahaha!

We have a lot of beers in mind to be brewing up soon. With our hop harvest right around the corner we can't wait to brew with our fresh hops, a Black IPA is in the works, a pumpkin beer and then tweaking and/or re-making some of our staple beers. But what about you?! What do you guys think we should brew? Rest assured that if you post an idea that catches our interest and we brew it that you shall be rewarded in the best way possible: WITH BEER!!

Yesterday we decided it was time to test the limits of our equipment. We stuffed our mash tun with enough grain and water that it was nearly at the brim. The wort we collected from that constantly threatened to boil over the top of our kettle. Scary as it was at times, I think we nailed it. The 1.086 gravity we achieved should result in a 9-9.5% Imperial IPA with an amazing hop flavor from 11 different hop varieties. That'll do pug, that'll do.

Starting to fill all the fermenters again after a double brew this weekend! Saturday was an oversized 2 hearted clone (again) and Sunday saw Dave's pale ale go all-grain with the addition of Motueka hops. We shall see how that New Zealand character blends in

Treated 10 gallons of RO water with brewing salts today. Everything should be dissolved and ready to go by Sundays brew: a knockoff of Bell's Two Hearted Ale, recently ranked the #2 craft beer in the US

All doughed in for the all-grain Choco-Bongo! If anyone said chocolate and banana didn't belong in a milk stout well we sure weren't listening

Our first all-grain batch from Sunday is fermenting away! We were aiming for a 1.057 but under shot with a 1.051. A hotter mash with less sparge water and a more vigorous boil should earn us back some gravity points in the future. Luckily a brown ale is very forgiving and the wort samples tasted very good.

All-grain Brown ale tomorrow. Perhaps some quick mead batches if we are ambitious. Admittedly we have been slacking on the brewing lately but hopefully the 60 lbs of grain and 30 lbs of honey we currently possess will get things rolling

Hop rhizomes are in the mail! The first years harvest is expected to be light but in the ensuing years we can see what kind of terroir our hops add to the brew

We found out the hard way that one of our new picnic taps has a slow leak. We were able to enjoy maybe a six pack before the entire keg of Columbus ESB drip dropped out into the fridge and eventually the floor. The garage floor is a little sticky but thankfully we hadn't moved the beer fridge indoors yet
