We set out to ferment some green beans. Somehow, we ended up turning it into a Colorado green chile experience.

This batch started when Belafonte Farm had 40 pounds of beautiful green beans available. We knew we wanted to make them spicy and garlicky, but then they also had fresh green chiles and the idea got a little more ambitious.

We roasted the chiles over an open flame, mixed them with the green beans and garlic from Belafonte, added onion from Native Hill Farm, and let everything ferment together.

The result is crunchy, spicy, rich, garlicky, a little smoky, and honestly just awesome. It really does taste like Colorado green chile somehow became a fermented green bean.

We made about 70 jars of Green Chili Green Beans. They’ll be available in limited quantities at all of our markets, so get there early if you want one! 🫡

This might be the most Colorado ferment we’ve ever made.

Harvested Tuesday. Fermenting a couple hours later. At the farmers market Saturday 🦠🍅

That’s what local and seasonal actually looks like for us.

These cherry tomatoes are harvested Tuesday morning at Belafonte Farm and within a couple hours, they’re back with us and fermenting with their garlic and basil. Thursday we package them. Friday they’re ready. Saturday they’re at the market.

Then we do it all over again the next week, for as long as the tomatoes keep coming.

If you know, you know. We’ve made this one in tiny batches here and there over the years, but most people have never had it. And if you love cherry tomatoes, it’s truly something to behold.

We can’t make this whenever we want, and that’s kind of the whole point. We make what the farm has, when they have it. Sometimes it’s a little more, sometimes it’s a little less.

Working this closely with local farms means we get to take something at the absolute peak of its season and get it into a ferment almost immediately. A little snapshot of what’s growing here right now.

Huge thank you to Belafonte Farm for growing everything in this batch and accommodating our slightly ridiculous harvest-to-ferment schedule every week. We’re really grateful they let us do stuff like this.

Two new small batches are here, and one of them is so limited that we’re doing it as a preorder 🥲

First up is Daikon + Shiso. Daikon, fresh shiso, and shiso microgreens from unsungfarm, with lacinato kale and garlic scapes from Belafonte Farm. It’s fresh, crisp, deeply aromatic, and coming with us to markets this weekend.

Then there’s Cherry Tomato + Basil.

Cherry tomatoes, basil, and garlic, all grown by Belafonte Farm. That’s it. It’s wildly flavorful and a truly special batch. If you've had it before, then you know what I'm talkin' about.

We made very, very little. There isn’t enough to divide between all of our markets, so Cherry Tomato + Basil is available by preorder only through the link in our bio. If you want a jar, don’t wait.

This is our favorite part of summer. Farms grow something incredible, and for a brief moment, we get to make a ferment that couldn’t exist any other time of year. You can taste it.

Cucumber Kimchi is here for the weekend 🥲 if you liked our previous kimchi's or our pickles, this is the best of both worlds.

When Brett and Vanita say they have cucumbers, you come running. We're incredibly grateful for the amazing work and advocacy that Switch Gears Farm puts out into the world. You can taste it.

Purple kimchi is here 💜

This small batch is built around purple napa cabbage, daikon radish, and purple scallions from unsungfarm, purple carrots from Switch Gears Farm, kale from Native Hill Farm, and garlic and garlic scapes from Belafonte Farm.

Loaded with leeks, purple onion, ginger juice, chickpea miso, butterfly pea powder, and just enough ghost pepper to bring a little heat.

It’s crunchy, bright, garlicky, a little funky, a little spicy, and easily one of the prettiest ferments we’ve ever made.

The base batch is vegan, and we also made a fish sauce version for the folks who want that extra kimchi funk.

We’ll have it this weekend at the markets while it lasts, see ya there!

One of the best parts of doing this work is getting to spend time with the people who grow our food.

We got to hang with Brett and Vanita from Switch Gears Farm and bring home these ridiculous purple carrots from their farm in Longmont.

They’re growing beautiful food with soil health at the center. No synthetic fertilizers or sprays. Lots of compost, crop rotation, cover crops, and real care for the land.

That stuff matters. You can taste it. The color is deeper, the flavor is stronger, and the food just feels more alive.
We’re lucky to have farms like Switch Gears within reach, and even luckier that we get to turn their vegetables into fermented food for y’all.

Huge shoutout to Brett and Vanita for growing food the right way. These purple carrots are going to do some real magic in the jar.

New small batch this weekend!

Kohlrabi + Dill + Garlic Scapes

This one is crunchy, bright, garlicky, and very much a snapshot of the season right now.

The kohlrabi came from Michael at Old Town Urban Farms and Dennis and his crew Belafonte Farm. The dill came from Old Town Urban Farms, and the garlic scapes came from Belafonte.

This is exactly why we love doing small batches. A few beautiful crops show up at the same time, we get to preserve them, and then you get a jar that tastes like this specific moment in the season.
