We were able to get 2 backstraps this last weekend and we prepared them a bit differently than usual. My friend sautéed a chopped sweet onion in butter, added garlic, pepper sauce and some rubs and continued to simmer it till it was the right consistency. One backstrap wee layer out flat covered it with the sauce, covered with sliced onions and put it in the pit. The other we folded over itself twice, covered the top with the sauce and wrapped it in bacon slices. Had the pit going with hickory and pecan and got her up to 300f. Flat strap was ready in 35 minutes.. but at 30 minutes we added some of my BBQ sauce. Was incredible!!’ The bacon wrapped venison ball went for an hour and 20 minutes. It was even better! So happy these turned out so incredibly good for my friend’s birthday!
