Y’all this is one of our absolute favorites! It’s quick, easy and crazy tasty!

Ingredients.
1 pound of flank steak, trimmed and cut into three pieces
1/4 of a cup of reduced sodium soy sauce 1 teaspoon of toasted sesame oil
1/4 of a cup of chopped yellow onion Three garlic cloves, minced
1 tablespoon of brown sugar
1/2 teaspoon of crushed red pepper flakes

The Slaw
2 cups cucumbers, cut into matchsticks 1 cup shredded carrots
1 1/2 tablespoons of rice vinegar
1 teaspoon of toasted sesame oil
1/4 teaspoon of kosher salt

Directions
1. For the steak, place in your crockpot, combine the soy sauce, sesame, oil, onion, garlic, brown sugar, ginger, and pepper flakes. Pour the marinade over the beef and refrigerate overnight.
2. The next day cover and cook on low for eight hours until the meat is super tender and it shreds easily. When the meat is done, shred it on a cutting board and return it to liquid in the crockpot.
3. Now let’s make the slaw in a medium bowl. Combine the cucumber, carrots, vinegar, sesame oil, and salt. Set aside for about 10 minutes so the flavors can marry.
4. Put your tacos together. Heat up your tortillas, add desired amount of meat and slaw and enjoy!!

Not sure what to do with that pound of ground beef sitting in your fridge thawing right now? Well, you’re welcome. I have an excellent recipe for you!

Korean Beef Bowls

Ingredients
1 pound lean ground beef
five garlic cloves, crushed
1 tablespoon freshly grated ginger
2 teaspoons of toasted sesame oil
1/2 cup of reduced sodium soy sauce
1/3 cup of light brown sugar
Six green onions, chopped
4 cups of cooked white rice
1 tablespoon of sesame seeds

Directions
* Gather all your ingredients.
*Then heat a large skillet over medium high heat. Add beef and cook. Crumble into small pieces until brown, about 5 to 7 minutes. Drain excess grease.
*Stir in your aromatics, the ginger and garlic. Add sesame oil and cook until fragrant, about two minutes.
*Stir in soy sauce and brown sugar. Until the beef absorbs some of the sauce, not all of it. That will be about seven minutes.
*Serve over white rice topped with the green onion and sesame seeds.

I also like to add Sriracha on top of mine you can also incorporate red pepper flakes too, depends on your level of spiciness. Hope you enjoy!
