You can do wonderful things with leftover rice… ricotta rice balls.

Leftover rice into the food processor with ricotta or cream cheese shredded mozzarella eggs salt pepper and garlic powder.
Mozzarella sticks cut to a small nuggets. Create small balls and stuff the mozzarella nuggets.
in a small bowl mix One egg half cup of flour teaspoon of baking powder salt and pepper dip the balls into the batter and in to Panko breadcrumbs and fry in deep oil. They come out crispy and cheesy and very delicious.
