Did pumpkin spice "everything" show up early this year?

Seems a little ambitious when Colorado is still hitting the low 90s.

But every fall, pumpkin arrives and apparently takes custody of the entire food industry. Coffee. Beer. Ice cream. Candles. Cheesecake.

We respect the commitment.

Fortunately, salsa spice requires a little less attention.

And it’s pretty hard to beat fresh, homemade salsa that takes about five minutes to make.

Grab a big can of whole peeled tomatoes, chop up a little yellow onion, squeeze in the juice from half a lime, add a packet of Salsa Royale seasoning and a handful of cilantro.

Huevos rancheros figured this out a long time ago: eggs (any style), potatoes, beans, a warm tortilla, and a generous spoonful of fresh salsa made with Salsa Royale seasoning.

Some legends feel like they’ll be around forever, and Dolly Parton was definitely one of them. We were sorry to see her go.

She gave us unforgettable music, sharp humor, enormous generosity, and enough sparkle to light up Tennessee - plus every other state in the union for that matter.

We like to think Dolly would have appreciated a good bowl of homemade salsa too. What's your bet on her heat profile - Mild, Medium or Hot? Our bet is that she would prefer Hot.

Some of our Colorado customers recently asked if we have any secrets for making really good homemade salsa.

They were asking what else to put in, besides Salsa Royale seasoning, of course! We’re not giving away our secrets.

So we thought we’d mix things up and share one of our favorite smokey-flavored recipes.

Smoky Fire-Roasted Salsa - Serves about 4

1/4 cup chopped white onion
2 tablespoons diced jalapeño
2 cloves garlic
1 28 oz. can fire-roasted diced tomatoes
Juice of 1/2 fresh lime
1/2 teaspoon salt
1/2 bunch cilantro
1 packet Salsa Royale

Toss everything into a blender or food processor. Pulse it for chunky salsa or blend it longer if you like things smooth.

Pour it into a bowl. Grab the chips.

The hardest part is pretending four people are going to share it.

People say you should never grocery shop when you’re hungry.

That’s good advice.

But what they should really warn you about is grocery shopping to pick up that one thing...

But once you get there, you remember your big order of Salsa Royale arrives today, and you decide you’re making fresh salsa tonight.

Want to hear how Salsa Royale began?

This photo is the closest one we have to the time when my dad created it in the kitchen of our Northern Colorado home.

It all started with chips and a little healthy rebellion.

In 1990, my dad, Dan Pineda (pictured on the right), had reached his limit with vinegar-heavy, often watery, store-bought salsa in a jar.

So naturally, he decided to create his own.

After months of experimenting. and way more tomatoes than anyone wants to admit, he came up with a fresh, homemade salsa that quickly became the star of every gathering.

My mom, Lucy, and us boys Russ (pictured on the left) and Doug served as taste testers. Together, we landed on the best-tasting combination.

We brought our homemade salsa everywhere, including BBQs, birthdays, anniversaries, holidays, and just about any gathering you can name. Before long, friends started asking for the recipe.

That’s when mom developed the breakthrough idea of turning the recipe into a dry seasoning mix that would be easy to ship, to store, and simple to make at home.

The result was a fresh batch of mouthwatering salsa that delivers just the right heat (mild, medium, hot), blended in about 10 seconds.

Over the years, customers discovered how versatile the seasonings could be, using them in far more than salsa alone.

Thirty-six years later, Salsa Royale is still family-made and shipped from Northern Colorado. Our customers base is growing steadily across the United States. And business is going strong, headed up by Russ and Lucy, the Salsa Royale dream team.

It's camping season in Colorado, but there's one thing that has me a little on edge for our next trip...

It's about the bear sitings! Those big boys are showing up a lot more across our mountains.

Some campers use bear spray or bear bells. Some hang their food from a tree. And we can always sleep in the car. But what fun is that?

So I came up with a new idea we're going to try. I'm going to sprinkle our hottest Salsa Royale seasoning around the campsite perimeter.

Would it stop a bear? Absolutely no idea.

Would it make the bear’s dinner taste better? Ummm, yes! But I don't want that dinner to be me.

But for real...remember to use actual bear-safe food storage. Save the seasoning for the burgers, and for making your camping salsa in your shake blender.

And try to get the kids to leave some avocado or blue corn chips for the actual campground.

There's one small but mighty ingredient that steals the show in the best tasting salsa and guacamole...
