Celebrating local flavors with a new addition to the Zadran’s Kitchen menu.

Afghanistan is a landlocked country, so its traditional fish dishes naturally center around freshwater catches. In the northern regions, catfish is among the fish enjoyed from local rivers and waterways. With that connection in mind, we’re bringing together two places we call home.

Our new dish features locally sourced Blue Catfish from the Rappahannock region, prepared with regional ingredients and the flavors and techniques of Afghan cooking. A Virginia catch with an Afghan story, connecting our roots with the land and waters around us today.
