While our bodies gratefully receive the nutrients good food provides, our souls revel in the pure pleasure that yummy food delivers. I was a teacher for 20-something years. I stayed home and raised three great boys for some years. Eventually, they went off to college and some good and thoughtful moms got together several times a year to send all of our college boys care packages. There were homema
de cookies, power bars, tea and honey as well as silly things we found around the house like strings of pumpkin lights for Halloween or disposable cameras left over from a wedding and homemade valentines in February. Over time I became more aware of the poor quality of food my kids were eating at school and began to feel that even homemade cookies were probably not the most nourishing thing I could send them. I looked for really healthy bars at the health food store that also tasted great, but I was not impressed with either the quality of the ingredients in commercial bars or the taste. I knew I could probably make something more nutritious and better tasting in my own kitchen. So with a little trial and error and lots of feedback from friends and family I came up with the MarthaBar. It was an instant hit, not just with my college boys, but also with my neighbors, my nephews and nieces, my brothers and sisters, my mom’s group, the nice barista at Starbuck’s, Meghan at the local health food store and her Dad (who hates “power” bars). So I thought maybe, just maybe I might have something here, and I really think I do. I hope you enjoy eating this bar as much as I enjoy making it!
