Mock tender might sound fancy, but it’s actually one of the most underrated cuts out there 👏

Step 1: preheat oven to 400°, heat olive oil and 2 tbsp of butter on a cast iron skillet
Step 2: sear all sides of the roast and season with your favorite seasonings
Step 3: place in oven and cook until internal temp is 130°
Step 4: remove from oven and let rest for 5 minutes. Cut and serve!

From the shoulder of the cow—not the tenderloin like the name suggests—this cut is naturally a bit tougher. But when you cook and prep it the right way, it turns into something seriously delicious. Think of it as a budget-friendly cut with big, rich beef flavor 🤍
