Birthday Month Day 28: lunch at Longhorn.

Sweet Harold ordered the crispy chicken sandwich with fries. I enjoyed my NY strip with asparagus.

The free birthday dessert was a nice surprise! Rita provided great service.

Since August 28 is my birthday, every recipe I'm sharing today is one of my all-time favorites... and this Seafood Gumbo is right at the top of the list!

Loaded with shrimp, sausage, crab, and a rich, flavorful broth, it's the kind of meal that makes you slow down and savor every bite.

🍽️ Mama's Chocolate Pie

Today I'm taking a little detour from our August food holidays because it's my birthday.

For as long as I can remember, Mama almost always made me a chocolate pie for my birthday. She didn't ask what I wanted. She already knew.

This is one of the last chocolate pies she ever made for me. It was 2021, and she was nearly 91 years old. Looking back now, I had no idea how precious those birthdays would become or that one day this recipe card would mean as much to me as the pie itself.

Today, I still make her chocolate pie using the same recipe she handed down to me. Every stir of the filling and every swirl of the meringue brings back memories of birthdays around our family table, laughter from the kitchen, and a mama who showed her love one homemade pie at a time.

There are fancier desserts in the world, but if you asked me what I'd choose for my birthday, the answer has never changed. I'd choose Mama's chocolate pie.

1/3 cup all-purpose flour
1 cup sugar
1/2 T. salt
3 egg yolks (reserve whites for meringue)
1 1/2 cups milk
1 t. vanilla
1 T. butter

Combine all ingredients in a large saucepan over medium-high heat, stirring constantly for 12-15 minutes until thickened enough for pie. Pour into prebaked pie crust.

In a separate bowl, using a hand mixer, beat egg whites with a pinch of salt and 2 - 3 t. sugar added gradually. Beat on high until peaks form and spread on top of pie filling. Brown meringue in a 350 degree oven. Let cool before slicing.

A perfectly grilled T-bone steak paired with a buttery broiled lobster tail is one of those meals that feels like a special occasion every single time. Add fresh green beans, warm bread, a squeeze of lemon, and sautéed mushrooms, and I'm one happy birthday girl!

🌿 TODAY’S WALK: THANKFUL

Today, I’m just thankful.

Thankful that I’m able to walk.

Thankful for good health.

Thankful for family and friends who love me.

Thankful for 65 years of life, memories, lessons, laughter, and love.

Thankful to live in a place this beautiful.

There is so much to be thankful for, and sometimes it’s good to stop and recognize it.

Today, I’m just thankful. 💜
