Surprising result…

I made multiple hot sauces using the exact same recipe, same fermentation, same process…

The only thing I changed was the pepper.

Same ingredients.
Same timeline.

Completely different results.

Some were bright and aggressive…
Others were deep and smooth…

It really surprised me how much the pepper still comes through, even after months of fermentation.

This one got me… 😂🌶️

This is an outtake from the first taste of a fermented superhot sauce and it hit WAY harder than I expected.

Hiccups, sweating… the whole deal.

This is from a bigger test where I made multiple sauces using the exact same recipe… the only thing that changed was the pepper.

But this is exactly where it starts.

Last year, this same space turned into a full pepper garden with more harvest than I knew what to do with… and this year I’m taking you all the way from seed to hot sauce.

I just posted the first video in my Backyard to Bottle series where I’m documenting the entire process of growing peppers and turning them into hot sauce.

One of the first steps is something a little unusual… soaking the seeds in black tea before germinating.
