Cauliflower dates and pistachios with a zesty lemon dressing. A pretty simple clean-out-the-fridge side dish or salad that you may just become obsessed with

3 cups cauliflower, cut into bite sized pieces (i used a cauliflower medley)
2-3 green onions, sliced
6-7 dates, seeded, chopped
1/3 cup pistachios, rough chopped
2 tablespoons butter or EVOO
1 1/2 Tablespoon whole grain mustard
1 lemon (zest and juice)
splash of white wine
handful of grapes (optional but they were in season)
salt and pepper

In a pan on medium heat toast pistachios remove from pan and place in a bowl. To the bowl add the zest and juice of a lemon, mustard, green onions. Set aside
On high heat sauté cauliflower in butter/evoo until a nice char is on them. Splash with white wine to let them steam a bit. Add dates to pan to help soften/rehydrate if needed.
Add to bowl with a handful of grapes, toss and serve room temp. Salt and pepper to taste.
