Have you ever had a steak so good you thought, “I could bathe in this”?

Well, today we took that a little too literally.

We rendered some of our Wagyu tallow and turned it into Amber + Cedarwood soap.

From pasture to plate to… shower, apparently.

I always love when the herd moves home. There’s something special about looking out the window and seeing cows grazing the pastures around our house.

Rotational grazing means moving cattle between pastures, giving grazed grass time to rest and regrow. It helps us make better use of available forage while protecting the roots and long-term health of the pasture.

This year, drought has made that rotation especially important. Without moisture, grass simply can’t recover as quickly, so we’re moving cattle sooner when needed to avoid overgrazing and lasting damage.

We’re also feeding hay that was baled for winter earlier than planned. It’s not what we hoped for in August, but drought changes the plan.

Taking care of the herd also means taking care of the land that feeds them. And right now, we’re certainly hoping for rain.

Cut from the top sirloin, picanha is known for that beautiful fat cap - leave it on! As it renders, it adds incredible flavor to an already tender cut.

A Parsons customer sent us this picture after cooking theirs with coarse kosher salt and high heat:

“Those steaks were absolutely delicious! We give them a 5 star rating, and Mom and Dad agree!”

They all will be ordering again. We love hearing that!

Not every day on the farm is quite as picturesque as a Kansas sunset.

Some days look more like this.

Working cattle is one of the many hands-on pieces of raising our herd - checking animals, keeping records and doing the everyday work that helps us know our cattle individually.

From tongue ➡️ ox tail ➡️ steak — this is what it looks like to honor the whole animal.

Last night, our friends at Bushel & a Peck created an incredible six-course Whole Animal Tasting Menu featuring Coover Wagyu.

Whole-animal cooking is about finding value and purpose in every part; taking cuts that are sometimes overlooked and using time, technique and creativity to turn them into something truly extraordinary.

As cattle producers, that means something to us. We put years into the genetics, nutrition and care of these animals. Seeing chefs bring that same thoughtfulness to the plate - celebrating not just the premium steaks, but honoring the entire animal was pretty special.

Thank you, Kelly + Mike, for a beautiful evening and for showing just how much possibility there is in a single animal.
