Spinach Pinwheels

Ingredients

1 egg
1 tbsp. water
1/2 cup shredded Muenster cheese
1/4 cup grated Parmesan cheese
1 green onion, chopped (about 2 tablespoons)
1/8 tsp. garlic powder
All-purpose flour
1/2 of a 17.3-ounce package puff pastry sheets (canned pastries) (1 sheet), thawed
1 pkg. (about 10 ounces) frozen chopped spinach, thawed and well drained

Directions

Heat the oven to 400°F. Beat the egg and water in a small bowl with a fork.
Stir the Muenster cheese, Parmesan cheese, onion and garlic powder in a medium bowl.
Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Brush the pastry sheet with the egg mixture. Top with the cheese mixture and spinach. Starting at a short side, roll up like a jelly roll. Cut into about 20 (1/2-inch) slices. Place the slices, cut-side down, onto 2 baking sheets. Brush the slices with the egg mixture.
Bake for 15 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.
For best results, make sure to remove as much liquid as you can from the spinach before adding it to the pastry. If it's too wet, it may make the pastry soggy

No Bake Power Bar

Ingredients

Old Fashioned rolled Oats - 1 cup
Kashi Unsweetened Organic 7 grain puffs - 1 Cup
Creamy Almond Butter - 1/2 Cup
Raw Honey - 1/4 Cup
Raw Sugar - 1/4 Cup
Coconut Oil - 1 Tbsp
Chia seeds - 1 Tbsp
Sesame Seeds - 1 Tbsp
Salt - pinch

Mixed Nuts/Dried Fruits - 3/4 Cup(Chop the nuts & fruits finely or I added grated coconut & finely chopped nuts)
Vanilla extract - 1/2 Tsp

Directions

1. Toast the Oats, nuts, sesame seeds, chia seeds and last the coconut till slightly browned.
2. To the toasted nuts, oats, seeds, coconut, add the dried fruit if using, 7 grain puffs etc and keep it aside.
3.Combine almond butter, sugar, honey, vanilla, coconut oil and salt in a small saucepan. Heat over medium-low, stirring frequently, until the mixture bubbles lightly, 2 to 5 minutes.
4.Immediately pour the almond butter mixture over the dry ingredients and mix with a spoon or spatula until no dry spots remain. Transfer to the greased flat pan. Lightly grease your hands and press the mixture down firmly to make an even layer (wait until the mixture cools slightly if necessary). Refrigerate until firm, around 60 minutes; cut into bars.

Cinnamon Pita Crisps 😋

2 Whole Wheat Pitas
4 tbsp coconut oil or butter, melted
5 tsp granulated sugar
1 1/2 tsp ground cinnamon

Directions

Preheat oven to 350°F. Line a baking sheet with parchment paper. Slice each pita in half, then each into six equal-sized wedges. In a bowl, stir together the sugar and cinnamon. Brush both sides of each pita wedge with coconut oil. Sprinkle cinnamon and sugar mixture evenly over both sides of the pita wedges, and place on baking sheet in a single layer. Do not overlap.
Bake for 15 minutes, turn over and bake another 10-15 minutes, or until wedges are crisp. Let chips cool on a wire rack before serving.

Easy Batter Fish Filet

2.5 lbs Fish fillet (Fish of your choice - cut into squares)
2 cups bread crumbs
1/2 cup lime juice
3 eggs (beaten)
salt and pepper to taste
Canola oil

Directions

Clean the fish thoroughly.
Pour the lime juice, then sprinkle with salt and pepper.
Dip each fish piece in egg then breadcrumbs.
Drop in hot oil and deep fry each fillet.
Remove from oil once cooked and let it drip onto a paper towel.
Serve with any sauce of your choice on the side.

Homemade Onion Rings

1 large onion cut into rings
1 15 oz jar of french onion dip
salt and pepper
oil for frying
1 cup flour(SELF RISING)
1 cup panco bread crumbs (PLAIN)
1 packet of garden green onion mix by hidden valley

Directions

Put onions into a deep dish and pour dip over onions.
Add salt and pepper to onions and dip.
In a bowl combine the last 3 ingredients.
Make sure onions are coated good with the dip.
Heat deep fryer with oil at 400
Coat each onion ring in the flour mixture.
Fry a few at a time until golden brown, about 3 to 4 minutes.

Fried Risotto

Sometimes you just have to live a little

Ingredients

8 cups vegetable oil - for frying
6 cups risotto - cooked, spread on a baking sheet, chilled
24 (1/4 pound) mozzarella - cut into ½ cubes
2 cups flour
4 eggs, beaten
2 cups bread crumbs - fine

Directions

Dip fingers in water and shape 2 rounded tablespoons chilled risotto into a (1 1/2) ball around a cube of mozzarella. Roll in palm of hands to make a smooth ball. Place ball on a baking sheet lined with waxed paper. Repeat until you have formed 32 balls. Cover with plastic wrap and store in refrigeration until ready to fry. (The recipe may be prepared a day in advance to this point.)
In a large pot or Dutch Oven, heat oil to 360°F-370°F. (Use a deep fat or candy thermometer to gauge the temperature).
Put flour, eggs and bread crumbs in separate bowls. For each risotto ball: roll in flour and shake off excess; dip in egg and let excess drip off; roll in bread crumbs; transfer to a baking sheet lined with waxed paper.
Using a metal slotted spoon or skimmer, lower six balls into the oil. Fry until golden brown, approximately 3 to 3 1/2 minutes per batch of six. Transfer to a paper towel to drain. Repeat until all the balls are fried.
The risotto balls are best if served immediately. They may be held in a 250°F oven while the remaining balls are fried.

Fried Pickle Spears

4 cups canola oil
1/2 cup all purpose flour
2 eggs
1 cup panko breadcrumbs
6 dill pickle spears
Ranch dressing for dipping

Directions

Heat oil in a 12 inch skillet over medium high heat.
Place pickle spears on a plate with paper towels, blotting gently to remove excess moisture.
Place flour in a shallow dish. Add eggs to another shallow dish and beat gently with a fork or whisk. Place panko breadcrumbs in a third shallow dish.
Dip each pickle spear into the flour, then into the egg, back into the flour, then back into the egg, and lastly into the breadcrumbs. Be sure to coat well with the breadcrumbs.
Fry in hot oil for 2-3 minutes on each side or until deep golden brown. Drain pickles on a cooling rack set over newspaper or paper towels. Serve with ranch dipping sauce.

Buffalo Chicken Rolls

Ingredients

3 skinless, boneless chicken breasts
1/3 cup celery, small diced
1/3 cup carrot, small diced
3 Tbsp mild buffalo wing sauce
3 Tbsp barbecue sauce
Egg roll wrappers
4 to 6 cups peanut oil

Directions

In a medium saucepan, add 4 quarts of water and chicken. Bring to a boil over medium-high heat and allow to boil for 12 to 15 minutes. Remove chicken and let stand for 5 to 10 minutes to cool.
Using 2 forks, shred the chicken and place in a medium-size bowl. Add the celery, carrot, buffalo wing sauce, and barbecue sauce. Mix well.
On each egg roll wrapper, place 1 1/2 to 2 tablespoons of the chicken mixture. Roll up the egg roll per package instructions (like an egg roll). Dab the last edge with water to help to help seal.
To Fry: In a wok or deep skillet, heat the peanut oil over medium-high heat to 350 degrees. Deep fry the rolls, 3 to 4 at a time, until golden brown, turning only once. Transfer to a paper towel-lined plate.
To Bake: You can also bake these in a pre-heated 425 degree oven. Spray the filled egg rolls with cooking spray and then bake for 10-15 minutes (turning half way through) until golden brown and crisp.

Banana Muffins - Low Carb

Ingredients

1-3/4 cup low carb baking mix
1/3 cup granular Splenda
1/3 cup Erythritol (or use all Splenda, just count the extra carbs)
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 small banana mashed
1/2-1 tsp imitation banana extract (to suit your own taste)
1/3 cup butter or extra light olive oil
2 eggs
1/4 cup chopped walnuts

Directions

In a mixing bowl combine 1 cup of my low carb baking mix, sweetener, baking powder, baking soda and salt. Add mashed banana and butter or oil and mix on low speed until well blended. Add eggs and remaining 3/4 cup of baking mix, beat on low speed again until well blended. Pour batter into a prepared 12 count muffin pan and bake at 350 for 20 minutes. Let cool in the pan about 5 minutes then remove the muffins. Eat warm with butter or cool thoroughly and store in an airtight container. These are a big hit in our home

Cinnamon Snacks

Ingredients

6 Rhodes Dinner Rolls or 6 Rhodes Buttermilk Biscuits, thawed but still cold
1 teaspoon cinnamon
1/4 cup brown sugar
3 tablespoons butter, melted

Glaze:
1 cup powdered sugar
2 tablespoons softened butter
1 teaspoon vanilla
1-2 tablespoons milk

Directions

Cut each roll or biscuit into 4 equal pieces.
Combine cinnamon and brown sugar.
Coat each dough piece with cinnamon sugar mixture.
Arrange each coated piece evenly in a sprayed 8x8-inch baking dish.
Pour melted butter evenly over coated dough pieces.
Bake at 350°F 20-25 minutes.
Combine glaze ingredients and drizzle over warm snacks.

A Good Deviled Egg

Ingredients

1 dozen eggs
2 teaspoons dijon mustard
⅓ cup mayonnaise
1 Tbsp minced shallot or onion
¼ teaspoon Tabasco sauce
Salt and pepper
Paprika

Directions

First hard boil the eggs. (See how to make hard boiled eggs.) Fill up a large saucepan half-way with cold water and gently add the eggs. Cover the eggs with at least an inch of water, preferably two inches. Bring the water to a rolling boil. Cover, and remove from heat. Let sit covered for 10-12 minutes. Drain hot water from pan and run cold water over the eggs. (At this point if you crack the egg shells while the eggs are cooling, it will make it easier to peel the shells.) Let sit in the cool water a few minutes, changing the water if necessary to keep it cool.
If you are working with very fresh eggs which can be difficult to peel when hard boiled, I suggest steaming the eggs to hard cook them instead. Just fill a saucepan with an inch of water and insert a steamer basket. Bring the water to a boil and place the eggs in the steamer basket. Cover and let the eggs steam from the boiling water for about 15 minutes. Then shock with cold water and peel.
Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.
Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a sprinkling of salt and pepper. Add more mayonnaise as necessary to get to the creamy consistency you want.
Pipe through a piping bag (star tip) or simply use a spoon to put the egg yolk mixture into the egg white halves. Sprinkle with paprika.
