Ingredients
4 large flour tortillas (10-inch)
1/2 cup Thousand Island dressing
3/4 pound thinly sliced deli corned beef
1 cup shredded Swiss cheese
1 cup sauerkraut, thoroughly drained
2 cups shredded green cabbage
2 tablespoons butter, melted
Method
Lay out the tortillas and spread 2 tablespoons of Thousand Island dressing evenly over the center of each one.
Layer the corned beef, shredded Swiss cheese, drained sauerkraut, and fresh green cabbage right on top of the dressing.
Fold the left and right sides of the tortillas inward, then roll them up tightly from the bottom just like a burrito.
Heat a large skillet over medium heat and lightly brush the outside of the wraps with the melted butter.
Place the wraps seam-side down in the hot skillet and cook for 3 to 4 minutes per side until the outside is crispy and golden brown.
Remove from the skillet, slice in half, and serve warm with a little extra dressing on the side for dipping.
