🫐💙 BLUEBERRY MUFFINS WITH STREUSEL TOPPING 💙🫐

Nothing beats a warm, bakery-style blueberry muffin with a buttery, crumbly streusel topping! These are loaded with blueberries and are SO good with a cup of coffee. ☕️🫐

🧁 Muffin Ingredients

• 2 cups all-purpose flour
• 1 cup granulated sugar
• 2 teaspoons baking powder
• ½ teaspoon salt
• 2 eggs
• ½ cup butter, melted
• ½ cup milk
• 1 teaspoon vanilla
• 2 cups fresh blueberries, washed and drained
(Frozen blueberries work too!)

🍯 Streusel Topping

• ¼ cup all-purpose flour
• 2 tablespoons brown sugar, packed
• 2 tablespoons granulated sugar
• ¼ teaspoon ground cinnamon
• ⅛ teaspoon salt
• 2 tablespoons cold butter

👩‍🍳 Directions

1. Preheat oven to 400°F. Line a muffin pan with paper liners.
2. In a large bowl, whisk together flour, sugar, baking powder and salt.
3. In a separate bowl, whisk the eggs until smooth. Add melted butter, milk and vanilla. Whisk until combined.
4. Pour the wet mixture into the dry ingredients and stir just until combined. The batter will be lumpy—don’t overmix! Gently fold in the blueberries.
5. For the streusel, combine flour, brown sugar, granulated sugar, cinnamon and salt in a small bowl. Using a pastry cutter, cut in the cold butter until the mixture is crumbly and coarse.
6. Fill the prepared muffin cups with batter. Sprinkle each muffin generously with streusel—about 1 tablespoon or more on each.
7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean, with just a few crumbs attached.
8. Let muffins cool in the pan for several minutes, then transfer to a wire rack to cool completely.

🫐 STORAGE TIP: Store in an airtight container for up to 4 days. These also freeze beautifully, so you can pull them out whenever that blueberry muffin craving hits!

☕️ Gigi’s tip: That buttery streusel topping is what takes these from good muffins to “I’ll just have one more!” muffins. 😂

🍗 Roasted Chicken with Leek & Baguette Dressing

This one is comfort food at its BEST! 🤤 A golden roasted chicken sitting on buttery leeks, then that delicious pan sauce gets soaked up by toasted baguette pieces. Trust me—you’re going to want every last bite!

Ingredients

* 1 whole chicken
* 2–3 leeks, cleaned and sliced into ½-inch rounds
* Several sprigs fresh thyme
* Several sprigs tarragon (I used dried)
* ½ cup white wine (I used Chardonnay)
* 1 cup heavy cream
* 1 stick good-quality butter
* 1 baguette
* Salt & pepper, to season chicken

Directions

1. Preheat oven to 400°F.
2. In a medium-sized baking dish, layer the sliced leeks across the bottom. Add the thyme, tarragon and butter.
3. Place the whole chicken on top of the leeks and season generously with salt and pepper.
4. Pour the heavy cream and white wine over the chicken and into the dish.
5. Bake uncovered for 1–1¼ hours, or until the chicken reaches a safe internal temperature and is beautifully golden brown. Baste every 15 minutes with the pan juices.
6. Remove the chicken, cover loosely with foil and let it rest.
7. While the chicken rests, tear the baguette into bite-sized pieces and place them into the baking dish with the leeks, drippings and all those delicious juices.
8. Return the dish to the oven and bake for about 30 minutes, until the baguette is toasted, golden brown and has soaked up all that creamy goodness.
9. Let the dressing rest for about 5 minutes, then serve alongside the roasted chicken.

🍲 Slow Cooker Chicken Chowder

This one is comfort food in a crockpot! Creamy, hearty, loaded with chicken and vegetables, and so easy to throw together. Perfect for a chilly day or when you want dinner to cook itself! ❤️

🥕 Ingredients

* 4 cups chicken broth or stock
* 2 cans cream of mushroom soup
* Or use 1 can cream of mushroom + 1 can cream of celery
* I used 1 large can of cream of mushroom
* 4 teaspoons dried dill w**d
* 3 cups frozen corn
* 5–6 cups diced raw potatoes
* 2 cups sliced carrots
* ½–1 cup chopped onion
* 4 cups cooked chicken breast, diced or shredded
* I used rotisserie chicken
* 2–3 tablespoons chicken base

🍲 Directions

1. Add all ingredients to your slow cooker and stir well to combine.
2. Cook on HIGH for 1–2 hours.
3. Reduce heat to LOW and continue simmering until the potatoes and carrots are tender and the flavors have had time to come together.
4. Give it a good stir, taste, and adjust the seasoning if needed.
5. Serve up a big bowl and enjoy!

💚 A Little Healthier

For a lighter version, use low-fat chicken broth and Healthy Request cream of mushroom soup.

Gigi’s tip: Rotisserie chicken makes this extra easy—and gives the chowder great flavor! 😋

🍬 Butterscotch Potato Chip Bars

Ingredients

* 1 family-size bag potato chips (regular or Ruffles — I used regular)
* 4 cups mini marshmallows
* 1 cup butterscotch chips
* 4 tablespoons butter

Instructions

1. Crush the potato chips and place them in a large mixing bowl.
2. In a microwave-safe bowl, combine the mini marshmallows, butter, and butterscotch chips.
3. Microwave in short intervals, stirring between each, until completely melted and smooth.
4. Pour the butterscotch mixture over the crushed potato chips. Stir well until the chips are evenly coated.
5. Press the mixture firmly into a greased 8x8 or 9x9-inch baking dish.
6. Let cool and set completely, then cut into squares.

✨ Just like Rice Krispie treats—but with that sweet-and-salty butterscotch crunch!

🌶️ Momma Socorro’s Grill Salsa

Ingredients:

* 46 oz. can diced tomatoes
* 1 small to medium yellow onion, diced
* Fresh cilantro, chopped — optional if you’re not a cilantro fan
* 4–5 cloves garlic, or jarred garlic (“jarlic” 😉)
* Juice of 1 lime
* 2–3 jalapeños, chopped and seeds removed
* 1 bunch green onions, chopped
* 2 packets Momma Socorro’s Salsa Seasoning
* Salt and pepper, to taste
* Corn chips, for serving

Directions:
Add the tomatoes, garlic, lime juice, salt, pepper, and Momma Socorro’s Salsa Seasoning to a blender or food processor. Purée until smooth.

Pour the tomato mixture into a bowl and stir in the chopped onion, cilantro, jalapeños, and green onions.

Cover and refrigerate for several hours, or overnight for the best flavor!

Grab your favorite corn chips and dig in! 🌶️🍅🥑

This salsa is even better the next day! 😋

SALTED CARAMEL BUTTER BARS 🧈🍯

If buttery shortbread + gooey caramel + flaky sea salt sounds like your kind of dessert… you NEED to make these! 🤤

These little squares are dangerously delicious. Sweet, salty, buttery, and gooey—basically, everything a dessert should be!

🧈 CRUST

• 1 ½ cups salted butter, softened
• ¾ cup granulated sugar
• 1 ¼ cups powdered sugar
• 1 ½ tablespoons vanilla
• 3 cups all-purpose flour

🍯 CARAMEL FILLING

• 14 oz. caramel candies, unwrapped (about 50)
• ⅓ cup heavy cream
• 1 tsp. vanilla
• Flaky sea salt

👩‍🍳 LET’S MAKE ’EM!

Preheat oven to 325°F. Spray a 9x13-inch baking dish with nonstick spray.

Beat butter, granulated sugar, and powdered sugar for about 2 minutes. Add vanilla, then slowly mix in flour until a soft dough forms.

Press half the dough into the prepared pan. Wrap the remaining dough and chill it in the refrigerator.

Bake crust 15–20 minutes, until lightly golden around the edges. Cool for 15 minutes.

Meanwhile, microwave caramel candies and heavy cream for 1 minute. Stir until smooth, adding 30-second intervals if needed. Stir in vanilla.

Pour caramel over the crust and sprinkle with flaky sea salt. Crumble the chilled dough over the top.

Bake another 25–30 minutes, until bubbly and lightly golden.

Let cool completely, cut into 24 squares, and try not to eat half the pan before they make it to the dessert table! 😂

🍪 Mary’s Sugar Cookies 🍪

These soft, cake-like sugar cookies are perfect for decorating or enjoying just as they are!

Cookie Ingredients

* 2/3 cup Crisco oil
* 2 eggs
* 1 cup sugar
* 2 cups all-purpose flour
* 2 teaspoons vanilla
* 2 teaspoons baking powder

Frosting Ingredients

* 2 cups powdered sugar
* 1 teaspoon vanilla
* 2 tablespoons butter, softened
* Pinch of salt
* Milk, to desired consistency (I used about 3 tablespoons to 1/4 cup)
* Food coloring, if desired

Directions

1. Preheat oven to 400°F.
2. Beat together the Crisco oil and eggs until light and fluffy.
3. Add the sugar and mix well.
4. Stir in the flour, vanilla, and baking powder until everything is well combined. The dough will be a little sticky.
5. For Cookie Bars: Spread the dough evenly into a lightly greased small cookie sheet or jelly roll pan. Bake for 12–15 minutes, or until lightly golden.
6. For Drop Cookies: Drop spoonfuls of dough onto a lightly greased or parchment-lined baking sheet. Bake for 8–10 minutes.
7. Allow the cookies to cool completely before frosting.

Frosting

1. Beat together the powdered sugar, vanilla, softened butter, and a pinch of salt.
2. Add milk a little at a time until you reach your desired spreading consistency.
3. Tint with food coloring if desired, then frost the cooled cookies or bars.

💡 Tip: Decorate with sprinkles while the frosting is still wet for a festive touch!

🥓 Italian Bacon Green Beans

These green beans are packed with flavor and make the perfect side dish for just about any meal!

Ingredients

* 1 to 1½ pounds fresh green beans, trimmed
* ½ onion, chopped (or as much as you like)
* 2–3 cloves garlic, minced (or 1 tablespoon jarred minced garlic)
* 1 packet Good Seasons Italian Dressing Mix
* Pepper, to taste
* 5–6 strips bacon, cut into bite-size pieces
* 3 tablespoons bacon grease
* ½ cup water

Directions

1. Cut the bacon into bite-size pieces and fry until crispy. Remove with a slotted spoon, drain on a paper towel, and set aside.
2. Reserve 3 tablespoons of the bacon grease in a large skillet.
3. Add the green beans, chopped onion, garlic, pepper, Good Seasons Italian Dressing Mix, and ½ cup water to the skillet. Stir to combine.
4. Bring to a boil, then reduce the heat to medium-low. Cover and cook until the green beans reach your desired tenderness.
5. Continue cooking until the liquid has evaporated. If you prefer your green beans a little crisper, remove the lid during the last few minutes to allow the liquid to cook off more quickly.
6. Stir the crispy bacon back into the green beans just before serving.
