🫐💙 BLUEBERRY MUFFINS WITH STREUSEL TOPPING 💙🫐
Nothing beats a warm, bakery-style blueberry muffin with a buttery, crumbly streusel topping! These are loaded with blueberries and are SO good with a cup of coffee. ☕️🫐
🧁 Muffin Ingredients
• 2 cups all-purpose flour
• 1 cup granulated sugar
• 2 teaspoons baking powder
• ½ teaspoon salt
• 2 eggs
• ½ cup butter, melted
• ½ cup milk
• 1 teaspoon vanilla
• 2 cups fresh blueberries, washed and drained
(Frozen blueberries work too!)
🍯 Streusel Topping
• ¼ cup all-purpose flour
• 2 tablespoons brown sugar, packed
• 2 tablespoons granulated sugar
• ¼ teaspoon ground cinnamon
• ⅛ teaspoon salt
• 2 tablespoons cold butter
👩🍳 Directions
1. Preheat oven to 400°F. Line a muffin pan with paper liners.
2. In a large bowl, whisk together flour, sugar, baking powder and salt.
3. In a separate bowl, whisk the eggs until smooth. Add melted butter, milk and vanilla. Whisk until combined.
4. Pour the wet mixture into the dry ingredients and stir just until combined. The batter will be lumpy—don’t overmix! Gently fold in the blueberries.
5. For the streusel, combine flour, brown sugar, granulated sugar, cinnamon and salt in a small bowl. Using a pastry cutter, cut in the cold butter until the mixture is crumbly and coarse.
6. Fill the prepared muffin cups with batter. Sprinkle each muffin generously with streusel—about 1 tablespoon or more on each.
7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean, with just a few crumbs attached.
8. Let muffins cool in the pan for several minutes, then transfer to a wire rack to cool completely.
🫐 STORAGE TIP: Store in an airtight container for up to 4 days. These also freeze beautifully, so you can pull them out whenever that blueberry muffin craving hits!
